The 300 and 400 are amazing, what did you think about the size of that 400? lol The 300 I compared it to is the same size as your Deluxe 800 for reference. Crazy large! lol

That sucks, and I am sorry to hear it! It may be why they took it off the "sale" list and is no longer anywhere to be seen. I complained with pictures and they gave me a refund. It's crazy to think that Hatsukokoro has a line that is costing more than $250 and $300 given how terrible these were! I do know that they buy from many different Blacksmith's around the area, so the ones who created this garbage aren't creating the $$$ line, but I will never take a risk on this brand again. Once I fixed it though, it's ok as a beater knife and one I can kind of beat around and not be too worried about. I won't abuse it by leaving in water or whatever, but it won't be a "magnet block" queen either. lol Were you able to fix yours at all? If not, I would be glad to try and help if I could!

@DroneShotFPV not entirely, maybe a couple more sharpening sessions and it will have a straight line, and you right, this will be my beater knife haha, have a bunch of chefs knives needed a smaller one anyway, the handle is nice tho haha

@@raffieb762 That is something I have to say as well, the handle on mine is TOP NOTCH. Out of all the other crap, at least the "wood is good" lol. After thinning it and grinding away so much metal, mine is good to go now as far as those deep gouges and uneven lines. Hopefully in a few more sessions yours gets it's act together! haha

So this King 400 is vitrified and very hard. It does not dish quickly, so it's super slow to dish, and this particular stone would most likely last a lifetime. I don't think I could wear this stone down for many, MANY years. 🙂

The 300 and 400 are pretty similar, personally I can't tell a huge difference between the 300 and 400, but the 300 seems to slightly work out chips a little better. The quality of Japanese knives (workmanship or grinding) has really declined in recent years, but the prices have practically exploded. Nowadays you can sometimes get custom knives for that price and at some point it's almost pointless to buy Japanese knives.

To be fair, Hatsukokoro apparently is a Brand Umbrella type of business (from what i understand, I could be wrong) but they buy knives from various Blacksmiths in areas of Japan. Some are super high end, some lower end like this one. I won't ever buy a Hatsukokoro knife again, I can promise you that, but my other higher end knives are perfect! Tojiro had the ITk line which was an amazing knife for less than the price of this one. I will do a video on them soon!

@@DroneShotFPV i have a Hatsukokoro Hayabusa in Super Blue. The knife is nice but i think that for example Shiro Kamo use a way better Heat Treatment. But my last 2 knives were coustom knives. They were not that much more expensive than my Shiro Kamo Tosa 245mm Gyuto. Funny side fact, my most used knife in the kitchen is a 50€ Culilux Gyuto 😂 If its possible you should look at the culilux store, awesome knives for that money, the Chef is Is a former employee of Miyabi who has the knives manufactured in China according to his exact specifications (geometry, processing, heat treatment, Sandvik 14C28N steel) but does the final step in Germany.

I LOVE Kitchen knives (well all knives honestly, I have so many, EDC, Pocket folders, fixed blade, Kitchen / Chef knives, but mostly Japanese knives are my top favorite) and I buy them simply just to mess around with. I buy inexpensive and expensive knives the same. I am the same with with stones, as of today's delivery I have over 50 whetstones from Synthetic to natural, and am buying more. lol I test them against various steel types. Out of my super expensive knives, like you, my most used knife in my house is around the $40 or so range. Mostly because I don't let my wife near my high end ones anymore.. She tossed one of my Moritaka's in the sink, in a container half full of water, and did not wipe off the acidic food she just prepared! lol Then she piled other silverware in the same container.. OUCH! Thank you for the suggestion, I will check those out today!
