If you like it a little spicier, use N'duja. Cut into portion-sized slices, it's great for freezing and doesn't even need to be defrosted before cooking. It quickly dissolves completely and gives the sauce a wonderful flavour and powerful heat. Of course, the dish then has a different bite as the pieces of salami are missing, but it tastes fantastic and is even quicker to prepare as you don't have to cut any salami.

Just the right recipe for people who come home slightly drunk at night after a pub crawl or similar and are hungry. Or simply if you want to prepare a tasty meal quickly and easily when friends come to visit spontaneously. I always have salami (or frozen portions of N'duja for an even spicier version) in the house for such occasions. I also have plenty of basil growing on my balcony. If you then use high-quality pasta such as penne from Martelli, Guiseppe Cocco or Faella or similar, you can offer your guests a quick, high-class meal.

I love how authentic ingredients are simple and easy but best quality ingredients makes a dish next level especially a pasta or a pizza. Definitely making this one, I’m not a big fan of cured meats but salami and mortadella are my favourite from them. ❤ Actually would to see some recipes with what else you do with mortadella other than a sandwich.

@@vincenzosplate Today I could cook this recipe. A Salami Calabrese wasn't available here, but I could get Salami D'Aquila instead, and its taste merged very nicely with the onions and the passata from Mutti. Finally, the dish tasted wonderfully and is now in my rotation of pasta dishes.

Great video Vincenzo. Dish looks delicious! Based on the video, it looks like you didn't start the timer until after the water was boiling, cutting onions, cutting salami, shredding the cheese. etc. Kind of a pet peeve for me, since personally I consider all the prep work as part of the cooking procedure. I think most if not all content creators shave down the time that way. Taking everything in to account from what I saw, I would guess the time was closer to 30 minutes. But then you do this all the time, so maybe I'm off in my estimation. Of course, I wouldn't presume to count all your prep for cameras and such. I know you must do a lot of work to prep for all the video and associated tasks. Which I think you do great work with. Thanks for a great example of how to put together a delicious dish in such a short amount of time. Every time I make dinner for the family, it averages to be about a 1.5 to 2 hr process.

@@vincenzosplate I more or less did! Instead of diced sausage, I used pancetta. I fried the onions and mushrooms first just a bit, then put in the pancetta to cook it a bit slower while I finished off the mushrooms and onion. Deglazed the pan with white wine, reduced, added the cream, reduced more, then the passata, reduced further on a medium to high heat while stirring vigorously to prevent the sauce from burning, added the pasta with some pasta water and voilà!

I will, as always, blend the onions (as you do with your soffritto) and replace salami with "Ahle Wurscht" (a kind-of German salami which is made out of 100% pork, processed "warm carcass" and dry aged up to 12 month without starter culture). THANKS for this great idea!

I never tried adding water to the oil, sounds like a good idea, it will open the flavor of the olive oil. I think you should have caramelized the onions a little more, but anyway it looks fantastic 🤤✌️

I as an Italian, like Vincenzo, do not agree at all with what he says about putting some water in the bottle. We all put some water in the bottle to clean it and then pour it into the pan. This thing that Vincenzo says I have never heard. It is a theory of his that I do not share. You obviously do very well ! PS: All grandmothers in Italy clean the bottle with a little water to get the rest of the tomato purée out and not waste it.

And this is without exception, regardless if it is homemade sauce or not. Perhaps especially if it is homemade sauce, one does not want to waste a single drop in the bottle.

That's the cool thing when you have experience in cooking pasta and know all the basics. You can become creative and create your own recipes...for example, after a BBQ I take all the leftover meat, pork, beef, veal - chop it up and cook it for several hours in a pomodoro sauce and leave it in the fridge overnight. Easy to make. Incomparable flavors.

Maybe try it in one of your next videos "what to do with bbq leftovers"...make a standard pomodoro sauce like you're used to and just mix the chopped meat leftovers into it and let it cook until you like the consistence (usually several hours, fill it up with a bit water when it's getting too thick - but I think you know all that ;-) ) - be creative from then on...add pecorino and latte at the end? Mix a permeggiano reggiano crust into it? Just let it be? Looking forward to your version ;)

I also tried it with some quality mushrooms it's not as flavorful as with salami but it's still very good .
