My mum use to prepare christmas lunch the day before as well so she could relax with family the next day. Tbh i miss turning up the day before christmas to her hustling around the kitchen making amazing food. Cherish your christmas's will your family people :)

Wow, Rhodes! My BMF & former roommate traveled for work & he was in Rhodes for 2 weeks. He said it was beautiful & the people were so cordial. He loved it there.

those beetroot leaves - they go great with dill in a soup. Thing is very simple - just sweat onion and garlic, add cut beetroot leaves, and diced potatos. Once they are blanched, pour over some veg stock and cook for ~15min. Add chopped dill and presto - it's pretty much done. Season to taste with salt and pepper, you might also want to add some cream - either to whiten soup, or just a spoonful in your bowl.

My Mom always started holiday dinners on the day before. When I started helping Mom with those dinners, I also started on the day before. The only things I cooked on the day of the dinners were the things that tasted disgusting, reheated. I started those things just before the dinner. Everything turned out fabulous. Thanks, Andy. Another immense vid, Chef - thank you. What I personally take away from it the most is that if things do go a tiny bit astray, not to get stressed or panicky. I am really grateful that the runaway peas, escape artist sage and "The Worst Jug In The World" don;t end up on the cutting room floor

Perfect timing Andy! I’m gonna do my first Christmas lamb roast with 2 boneless leg pieces rolled in rosemary and garlic oil, duck fat roasted potatoes and prosciutto wrapped asparagus! All recipes of yours from over the years. Cheers mate happy Christmas!

If you boil the roast potatoes in alkali water that will break down their surface even harder so when you toss them they have an even more impressively fluffed up texture for even more crunch.

Looks great. A little different than our typical Christmas dinner here in Oklahoma. I might try this for our New Year's meal before I present it to the Christmas crowd so I don't get in trouble.

I ran into the same problem with a thermos for the gravy. I had an "Oh duh" moment! I now use a canning funnel to pour my gravy into the thermos!

Love your videos Andy keep it up :) I've used cornflour slurry to thicken sauces many time before but I always have this one issue...It's great and thick on a day of making but next day when I heat it up it's soooooo much thinner than the day before...Anyone any ideas why??

The cornflour loses its thickening properties in the fridge, better to thicken the sauce when you reheat for serving

re the roasties.......pour half the hot fat into a glass jug.....put spuds into the tray and pour the rest of the hot fat over....no need to turn and no fear of a spud falling apart :-)

One day I asked a little child who looked just like Andy to not dance in crowd that he could get hurt by dancing near man and child started fighting non stop with that man i mad sign to protect that child from and he was not agreeing to stop beating that man and now I see that boy's grown up form and Cooking seem to be completely different.

Can't tell you enough about how much I appreciaate mentioning Coeliacs! Can be really tricky this time of year with shared meals if people don't understand how easy it is for food to be contaminated, and that there are some really simple alternatives out there!

Sorry Andy Gravy Roasting pan on the stove top, add flour and cook off wilst scraping off the fond from the bottom of the pan. start putting the vegge boiling water in bit by bit but do;nt over do it. That was my fiirst job as job in nanas kitchen

You can do it this way, it's gluten free this way, but he doesn't thicken it properly. I usually make gravy with "stock" (better then bullion with a packet of gelatin) then add the pan drippings after the meat is done. With bigger proteins that need more resting time, think turkey, make the gravy after resting.

I'm from the UK but I've had lamb from various countries. In fact, I've had New Zealand lamb as my mum used to work for the NZMB UK office. However, despite eating lamb in almost every setting except at a Michelin-starred restaurant, I just can't get to grips with the flavour - I don't like it. I've never had lamb tartare but I've tried lamb burgers, sausages (the Moroccan style ones are passable), chops, shanks, etc. with different vegetables, seasoning, yada yada yada. When I eat lamb, I feel like my stomach doesn't even want to digest it, yet I've never had food poisoning or a bad toilet experience (TMI sorry) eating lamb so it's not that. I don't understand it. Has anyone else had this experience with lamb or another meat? I'm very open minded about food but when someone offers me lamb I say "Thank you but no thank you" every time.
