One of the best roast meat stall in Singapore, not only for their food, but also for the owner's generosity and hospitality. They are always very candid and friendly. On the weekends and without the cbd lunch crowd, you'll see lots of older folks patronising their stall. I've seen them offering free food or charging them at a lower price, it is a heartwarming sight. I love supporting this stall for these reasons.

Greg I live in Perth Australia and when visiting Singapore, inevitably end up in food courts like Food Republic, which to say the least the foods are average. Thank you for showing me a new food outlet, which will definitely be on my food list of where to eat. Keep up the good videos.

Hi Richard, for real singapore foods, if you do not mind the heat, wander to the heartlands or what we call hawker centres or coffeeshops. The hawker stalls are absoulutely hygenic and are regulated by the government via a hygiene cert. Whats more, its cheaper!

@@cpc5637 thank you very much for your suggestions. I am quite familiar with running around on your fantastic MRT, so can you suggest any of these food outlets along the MRT route? This will make negotiating to them a whole lot easier. I know the proximity of Maxwell Food Centre to the Chinatown MRT station and the heat and humidity don't really bother me too much. After all what is a bit of heat compared to good food yum!

Chinatown complex is reopening in June 19 after renovation. It's the place where the Michelin star soy sauce chicken is born . Old airport road at Mountbatten , tiong bahru hawker 10mins walk away from tiong bahru mrt probably have the best selection of food in SG . Other than that, Ang mo kio , yishun and toa payoh in the north , fengshan85 in Simei in the east , ghim moh , yuhua village in the West, Amoy food centre ,Maxwell food centre centrally all have fantastic food !

I chance upon this stall during lunch time, they open at around 12.30, During lunch time at around 12pm, you could see a queue, but in all honesty, they are one of the best roast meat in Singapore, Super friendly service(Especially the guy serving you, super joker) and the price is super reasonable. Maybe you can try Foong Kee and the stall at the corner of the street above them, I think they are called dong gui roast duck or something.

don’t know if you saw my insta story or not (haha) but i went today right after watching your video. changed lunch plans immediately!! the duck was the weak link of the 3; the fatty char siew and caramelised glaze more than made up for it though. wasn’t too happy with the lean parts. pork belly was wonderfully crispy.

That's a really good find Gregory. Just looking at it makes me wanna go there now... You should also try this shop called Toh Kee Roasted Meat (Chinatown) has been around since 1926 and is apparently the oldest roasted meat stall in Singapore. Must-tries definitely include their roasted duck, roasted pork and char siew. I have been going to this shop for about 40 years now. And another called Foong Kee Roasted Meat @ 6 Keong Saik Road. Apparently their wonton is one of the best in town. These 2 shops are the top of my list...

This stall is definitely above average. The duck meat does have some pull and chew, but I personally like it that way. The roasted pork and char siew does compare well to good HK roast versions. Can't really be disappointed even when they are having a bad day, and that is saying a lot....

@@ernestkj, Rubbish!... There are Singapore born Singaporeans speaking Cantonese before your great great grandparents are born!... Early immigrants into Singapore in the 19th century came from Southern China, GuangZhou and Fujian.... There are many Cantonese people in Singapore from that time. Singapore's Chinatown is Cantonese people's backyard since the 1800s.
@appl2597

@ Icbeomaneistari , Cantonese is spoken in Malaysia only at KL and Ipoh, around that area... In Johore, they speak Hokkien and maybe a bit of Cantonese (near Singapore after all).... In northern regions like Penang, their Hokkien is slightly different and they can't speak any Cantonese to save their life.

This is nice, but not worth queing more than 5 minutes for. I once had a few people in front buying over 30 packs for takeout.. Food wise, The char siew and sio bak are either brined or cured in bicarbonate of soda so that’s why the meat is quite tender.. but that’s not traditional

@@GregoryLeow whether this particular stall uses chemicals or not, we would not know, but I doubt it. roast people are usually quite purist... Actually, this has always been a hotly debated topic. Apart from meat quality, the method of preparation is all important. There are 2 schools of thought. One is straight up marinate for at least 10 hours, low and slow until meat is tender, then increase the heat dramatically to finish for the crispy skin, scrapping many times along the way. The other method is similar, except that the meat is cooked by boiling first. The meat is actually boiled tender then rested and surface dried by fan even before the roasting starts. There are several advantages to this method. The meat loses less mass and the meat can be quite tender while retaining good moisture. the oven can now operate at a much higher temp because meat is already cooked through and the roasting is mainly for crust and the ultra crispy skin. Every roast guy has a different way of doing it, but I notice shallow boil with skin side down and water just about 1.5 inch below the top being the most common method..... I tried both methods in Hong Kong, and honestly, most of the people I was with felt that the straight roast method is superior. I did a blind test and bought both styles. These same people mostly chose the boil method, stated better moisture, tenderness, and not as salty but meat was seasoned all the way through. It is surprising, but I actually prefer the boil method. I think it takes a lot less skill and tending to get superior results. You must taste them side by side for yourself.

Taste is very subjective, not everybody has an heightened taste buds, but if you can satisfied 50% of the crowd and it's constant daily, it doesn't really matter what method you used. Whatever much msg, sugar, tricks you used, taste & value is the ultimatum.
