That was absolutely perfect. Mark, the pasta, the atmosphere the desserts Rome. I love the Rome. I was there for two weeks. I went to the soccer games Roma oh we had the best time ever. I need to get back to Italy to Rome. Oh my goodness the best food ever thank you Mark thank you for such a delight treat to light treat what we are missing.

As long you use the right ingredients and avoid sugar, you should be able to make real italian pasta. Remember No Sugar and No cream.

Keep in mind that many typical Italian dishes call for regular pasta not fresh handmade pasta. You should not think that fresh handmade pasta is always the best for all kinds of dishes. This is a strange wrong way of thinking they have abroad regarding Italian cuisine. And of course we're talking about a very good quality of pasta (such as the famous “Pasta di Gragnano”, for example), not just any pasta. Greetings from Italy ! 👋

Depends on recipe. But waht we have are just suggestions of combinations: fresh pasta is used normally when the sauce is put on it ( pasta al pesto, pasta al ragú, pasta al sugo di noci) . Dry pasta when you want to "saltare" in the pot ( carbonara, amatriciana, puttanesca, arrabbiata, etc...) Plus, fresh pasta is made by eggs, and they are "heavy"...so we don´t use with too fatty ingredients.
