In this episode, I'm in the mood for Filipino food again. And, this time, I visit another turo turo spot, a grocery and cafe located in Manassas, Virginia. There, I eye the day's offerings, a line up that's ready for me to "point point." Iconic dishes like chicken adobo and kare kare and others too that I've never eaten before and that will further my exploration of Filipino cuisine.

There's a lot of version of cooking Adobo. It depends on one's preference. Some likes it with a lot of sauce, some dry, some sweet, some really salty/sour, some with additional veggies. The basic ingredients would be meat, soy sauce, vinegar, garlic (LOTS of it 😁), dried laurel leaf, pepper or peppercorns, salt, and sugar (optional). Meat used can be chicken, pork or beef. We can also use seafood, squid. Applicable to veggies too like string beans and water spinach. For Kare-kare, either fresh ground peanuts or peanut butter is used. Yes, oxtail and tripe are often cooked in Kare-kare. More flavourful that way. But it also depends on preferences and availability of the ingredients. Some prefer more meat. It's better with veggies like eggplant, bokchoy, string beans, and banana bud/blossom/ heart (no direct English translation 😅). The last vegetable is optional. It's paired with shrimp paste to make it more flavourful but we only add small amounts because it can be very salty and overpowering. Depends on how the shrimp paste is prepared. Saba banana (variety of plantain, Philippines has lots of variety of bananas 😊) is usually used in making Turon. It's the short and stout kind. It's the plantain that's usually added for cooked desserts and some dishes. Strips of sweetened jackfruit is also added. It can also be prepared ala mode. 😋

Interesting. There's a lot of delicious variation to chicken adobo. I think I like it with lots of garlic, some pepperiness, and a balance of sour and sweetness. I definitely need to try more versions, however. Luckily, it's one of the more common turo turo items.

Kare Kare is best with Oxtail and Tripe.

I have discovered that the oxtail and tripe combination in kare kare is pretty good. And, many places make it like this to great effect. The filet meat chunks are very good too. Thanks for watching.

There's no vinegar in menudo. It's probably the lemon/calamansi. It's basically tomato sauce+soy sauce+lemon/calamansi. For kare kare, we normally use tripe, oxtail and beef chuck. You won't enjoy it without the "bagoong" (shrimp paste).

Yeah...I can see how the menudo only had lemon/calamansi in it and no vinegar. Because the sour aspect was very, very gentle and not like vinegar.

I was over-focusing on the oxtail; so, it's good to know that kare kare can be kare kare beyond the inclusion of oxtail. The bagoong definitely was good when used in moderation. It livens up the overall experience definitely. Thanks for all the insights. I will feel more prepared now when I seek out Filipino food again...

Plantain? Oh, wow. When I was eating the turon, it did strike me as being plantain. But, I didn't associate Filipino cuisine with plantain. It was so delicious. Thanks for the info.
