I live in Portland. Until last year we had an ice cream place called Little Chickpea, which made ice cream out of chickpeas and it is probably the best vegan ice cream I've ever had. I've been vegan for 17 years and I've had a lot of vegan ice cream. Unfortunately they closed. :(

Yes! Great question! I only tried a small amount while I was testing it for flavor .. but I did notice the grittiness. I figured it was slightly too much beans, but I didn’t want to start adding a bunch of liquid to “balance” it as then I would have had wayyyy too much ice cream. 😂😂 But I do think reducing the bean amount and/or perhaps cooking them just a tad longer will help!

If you would leave out the Coconut Milk How, would you also leave out the nuts? If I use the Cashews, how much Cashew to this recipe would you recmommend please? I realllly need to remake this video with a proper/ improved recipe! 😂🙈 Honestly I'm not sure about adding cashews instead as it would take some trial and error, BUT I do know there are quite a few cashew-based ice cream recipes online. I haven't yet! It's been a busy summer and I haven't made nearly enough ice cream yet. 😂😂 I'm confident it will work with canned beans, but the recipe will need to be tweaked. If you're an adventurous cook, I recommend trying it out and adjusting as you go. Essentially you want a pudding-like consistency before adding it to the ice cream maker, so just keep that in mind and add sweeteners to taste. 🤗

But why? It's not healthy with all the sugar. Sugar is one of the worst things you can eat so to make something out of beans and load it with sugar to hide the taste of the beans well, yeah I don't know, not for me.

Oh! Sure! The _why_ is to make something that is healthier than store-bought ice cream... but still tastes like store-bought ice cream. 😄 Also, even homemade vegan ice creams use a lot of fat as the base (usually cashews or coconut cream) so I also wanted to see if there was another alternative for a base, that would still be creamy. Since I use a lot of beans to replace nuts in my salad dressings, I thought it could potentially make a nice substitute in ice cream as well. Basically, it's all about experimentation, which I love to do with food. As far as the sugar goes... as I mentioned in the video there are definitely substitutes that you could use, but if you don't eat any sugar other than fruit then you're right, this probably isn't the best recipe for you. 😊

Sugar is sugar. Your ice cream defeats any health benefits. It's a "no" from me. I have made *Cannellini Bean Nice Cream* using coconut cream, an overripe avocado & a small ripe banana which was good, but I am always ready to ditch the banana for less sugar in the final product. At least, after watching your video.. your recipe has a lot more sugar in it than a small banana. So, still learning. I have also had success with Chickpeas as well. Keep on trying. Good Luck. 👍🏾
