This brings me such sweet memories. My husband who passed after 35 years together loved this pepper beef. He was raised a country boy. Nest, potatoes, gravy, corn was all he ate. Never anything ethnic. I took a chance when we had fresh peppers and onions from our garden. I made this dish for the moon meal in Crispy noodles. From that point forward we would have it once a week and it was always our Christmas and New Year’s 🥘 meal

In the 80s my brother bought me the very same wok--beautiful & heavy duty! If memory serves, he bought it at Macys here in New York. Can't promise they still sell it, but worth giving it a try if anyone is still looking for one. Thank you, Flo, for such easy, quick, and delicious recipes!

I bought a carbon steel wok about a year ago and love it. I'm black from the south and my wife is east Indian from Singapore. I do the stir fry and she does the Gumbo and Jambalaya which she learned from my mom. Her Gumbo is outstanding and she loves my stir fry. I have to try this recipe, thanks.

This is soooo yummy. Cooked this dish twice so far, one with a couple of small green chillies and the other without. Doing this dish again tomorrow and will add the chillies again as we like a bite. Agree with Dude, this a great meal and good to share with friends.

I received my wok as a bridal shower gift 47 years ago. It’s well seasoned and nothing sticks to it. I just rinse it out with hot water and heat it until it’s dry. I use it all the time, not just for Chinese food.

Flo, your recipes are simple (but not necessarily, simplistic!) and the end results are great tasting dishes! I would like to know, since you use Chinese rice wine (of a few varieties throughout) quite a lot, how long can they keep once opened (I mean a bottle of it, from which you usually use a smattering only) before they deteriorate?

One of my favorites to make although it has been a while, now it will be made this week. I have never used oyster sauce in it though. My original recipe didn't call for it but I will add it next tie I make it. I also serve it over rice. You made me hungry. BTW, I am light on the black pepper too, hubs can always add more on his plate. 💞

Dude’s favorite is my favorite. I have tried many KZbin pepper steak recipes and they gave mostly been 9s not 10s. I have high hope yours will be a 10!! Amazon printing messed up the printing... the book’s very first page is page 21, followed by 22,23,24,25... then I get to what I am sure should be your picture page. I perused the book and am glad I bought it!!!! Just letting you know so you can reprimand Amazon.

This sounds great. I prefer my Chinese food to be on the spicy size so I was wondering how you would spice this dish up, adding peppers to the oil, chili oil as a finishing oil..?

You could add crushed red pepper to the oil along with the ginger, chili oil would work at the end.

Hi Flo, I found your Channel about 10 days ago and I immediately bought my first Wok (Flat-bottom) from Amazon. I already your Garlic Noodles three times and your Beef with Broccoli yesterday! Everything was so freaking delicious! It was so good, I couldn’t believe I made it myself! I was lucky enough to find all of the ingredients at Stop-n-Shop’s “International Aisle”. From the Oyster Sauce to Authentic Asian Noodles. However, l was a little confused because, I found two different kinds of noodles labeled “Yellow Noodles”. One brand was “KA*ME” said, “Chinese Noodles” but they looked like Ramen Noodles to me. The second package of Noodles were straight and said, “Lo Mein Egg Noodles”. I already used both of them but I preferred the straight noodles. Which is more authentic? Tomorrow, (Well actually today because it’s 3:17 AM) I’m going to make your Crispy Orange Chicken, possibly for breakfast... Maybe right now! This looks extremely delicious too, l’m so excited! I absolutely love your Channel and you! Thank you, thank you, thank you! ♥️👍🏼👏🏼👏🏼👏🏼

You are so kind! So glad you are enjoying the channel. There is such a wide variety of Chinese noodles. Use whichever one you like better. Doesn't matter if it's more authentic if you don't like them. If you recall, I was using spaghettini. LOL! However, I also find a lot of Chinese ingredients are not translated correctly, so I can't really say which of the packages you found were the yellow noodles I was referring to. I know that probably doesn't help but my goal is to help you make delicious meals that you enjoy! 💕

It’s stainless but not quite as large as yours but I’m very happy w/it. It came w/a glass heat -safe lid and wok utensil. Anyway. It works for me but I’m a beginner. Congrats on the new cookbook! Do you ever make this using fermented black beans(dao see)? I've never actually had this black pepper version but the black bean dish is my fave, and it's very similar. I love your methods- I was a pretty high level professional cook at one time, and my main mentor was a guy who had cooked for President Reagan, President Bush and been the banquet chef at the Four Seasons in Santa Barbara, and been the personal chef for the chancellor at William and Mary College- in other words, he wasn't a shoemaker, as we say.....anyway, he taught us to develop our palates and cook by how a dish should taste, and understand how it got that way.....we never used written recipes. He was very accomplished in a few different varieties of Asian cuisine. Chef Randy Aprill, I hope you're O.K.....Flo Lum, I am happy to hear about your cookbook and I look forward to purchasing a copy, although I don't cook so much anymore- I'm pretty disabled and it's just really hard....but I enjoy your videos very much.

@@FloLum Actually I eat a lot of microwaved crap, to be completely honest, and it's mostly kinda horrid, hahaha! Actually I first got the beef with black beans recipe from a Frugal Gourmet(remember him?) cookbook many years ago, and it works well with chicken or pork, and just about any kind of vegetable, although it seems to me he used asparagus.......basically I just stir-fry rinsed and chopped black beans with the garlic and ginger then carry on pretty much like your recipe here, although I like the peppers and onions to be more chunky....as I recall I first had the dish at Hong Kong, a little joint in a strip shopping center in Tulsa OK.... Oklahoma, believe it or not, has some pretty doggone good Chinese and Vietnamese food, as it was a big refugee center for the diaspora after the Second Indochina War....

🤣 Unfortunately, yes... but only in eastern Canada, like Toronto. I remember the milk bags when I was younger but they no longer use them here in the west. We use plastic milk jugs like normal people. 😆

It’s the cornstarch that velvets the meat. You can just omit the cooking wine if you want.
