Those columns would be a great way to get electricity out into the room. ALSO… the extra room near the bathroom should be an office. Anyone working in a kitchen that size, in a facility that size, will need one for sure.

Two sound suggestions to consider. Not sure about those columns you showed … perhaps building bespoke columns would be more in keeping with the look of the space. Going that way, you could put outlets on all 4 sides of each column and you’ll be solid for any configuration you decide on placement of work stations.

@@kimberlyearly8918 I think i heard Billy say when taking about the kitchen, that it was not going to be rennovated into a”commericial” kitchen, but rather a famiy kitchen for a private famiy residence. i dont recall his exact words, but that was how I understood the concept. I can just imagine that kitchen with the famiy and guests gathered around the massive fireplace, with a great roast of beef on a spit,, powered by a little “spit dog” trotting iin a tread-wheel as in medieval kitchens.and/or a turkey, or goose stuffed and hung by a hook over the coals. (just kidding about the dog, athough the Jack Russel terrrers are the right size.) ah yes, and there is a kettle of wassail in the scene somewhere. God Rest ye merry Englishmen!!

Billy rent out the chapel for weddings and the banquet hall for the reception and they hire there own chef. When you get suites 14:19 done up stairs you could put together a package deal for different events. Make the building work for you Billy

The iron pillars sound amazing. You can easily build an island around them, incorporating them into the island & that would be a fantastic design feature.

They wouldn’t need to be equally spaced. They could be closer to the edges or as posts to a large island. I wonder if putting support closer to the edges makes more sense since that is where the stress fractures are.

This is just a weird question, but have you ever thought once you have the chapel done and the beautiful kitchen of renting that space out for people to use for weddings and receptions? It's beautiful and it's picturesque I could see many brides wanting to do that and once your garden is up the possibilities are endless.

I suggested just this a while ago! Weddings in the chapel, receptions in the library space with the paneling, catered by cooks in the kitchen, guests stay in the rooms upstairs, make a bridal suite in the rooms above the chapel which would also be the place where the bride could dress before the wedding. Photos in the gardens! Perfect!

The kitchen renovation is fascinating. I find it interesting how you address the structural issues and think investment in those metal columns will provide beautiful architectural interest. Have you thought about creating a door to the side yard? Once you're done using it as a "dump" that yard could be used a a BBQ area and/or herb garden.

In my researching, I’ve seen a couple of 18th century sketches of large kitchens with pillars in them. They are usually quite large, but the ones you pictured look perfect for this kitchen. Wow, you can see why you should have them. You could even work them into an island or large table. I’m in for the long haul…I am so enjoying these videos!

To keep the floor free for walking about easily the beams to support the ceiling could be incorporated into the work surfaces or benches. That’s how the did it in the laboratory I use to work in.

Billy try and design one of the pillars in a island in the middle of the kitchen with lots of plugs and prep space for working on and small appliances. Example your household mixer, blender , kettle extra with your cooking utensils in drawers in the island. You have those beautiful big cupboards you want to move to the kitchen you can stir all your table linens and dinner sets in there. Basically all the table setting equipment you would need for functions. Those cupboards will be locked at all times as that will be a lot of money to replace them. When you get the gentle pan back by you that did all the drapes for the Chateau? He could advise you on tables clothes and napkins for a function hall and make them for you.

Can you release an update of the plan when you decide on where the supports will go please Billy? The notion of creating zones is good for the duality of a luxury family kitchen/event kitchen plan. Also, is the South facing towards the garden? A luxury kitchen design (that may be used as a commercial kitchen for events) should take orientation into account. Wedding feasts for example might be held in the South facing garden, therefore the windows on the South face might work better as doors for ease of service and letting in more light and passive solar heating. I'm going to send you a design.

Hey Billy! Just a thought on the posts ... I'm not a structural engineer, nor am I a designer, but, it might be good to look into styles and designs from that time period, or else it might look out of place in the kitchen. Nothing wrong with metal posts, but, just consider maybe encasing them in something that looks like it could've been from the right time period.

Billy, you spent a lot of time and money opening that kitchen up, and it looks great! Why not ask an engineer if those four brace floor beams are even necessary? If they say, you can get by without them, then I wouldn’t put them in! It will change the look and feel of the whole openness of the room! A stress load engineer should be able to give you a quick read of the long term needs of support within the room!

Think "Venu" get the kitchen set up for catering for events...weddings, business meetings/conventions etc. which will work with the rooms upstairs as a place to stay/or dress. You need to have an end game...What am I going to do with the property when the remodel is completed? After all of the work the space needs a purpose otherwise the work will not be as satisfying, I think.

10,000 videos suits me - I'm in! The room is looking amazeballs already and those pillars (which are a fabulous idea) aren't only practical but will also help draw the eye around the room from ceiling to floor and back up again. Regarding upstairs, when Sean knocked out some of the plaster on the walls above the beam, it looked like there were some beautiful original beams behind it. I hope they'll be included in the architect's plans.

Another thought, if you are considering using the pillars to straighten the beams, you should go with adjustable columns and then surround them each with a decorative structure to make them into pillars.

If only renovation projects were this tidy, straightforward and timely I would consider updating my home. Around here workers take on two or three jobs at a time so you might see them two or three days a week. I greatly admire your daily cleanup; it boggles the mind how some people work in a room full of demo trash, holes in the floor, tools left on every floor in the house and dirt on furniture that should have been removed. 😊 You set a good example.

Once the Kitchen is done you could rent it out to a TV company . They could host a cooking program with lots of contestants and fine cuisine and rent some rooms for accomodation and casting etc !! You could actually get your money back !! Hire it out for locations for drama. Good luck with all the renovations love watching the changes.

If you built work islands between the 1st and 2nd columns and the 3rd and 4th columns you could tie the posts into the decor while also breaking up the expanse of the room into manageable work areas. This would make it work for large family gatherings as well as catered events if desired, and keep the room both cozy and professional

As a comment on the proposed support poles, would you consider reverse buttresses emanating at about half-way up the side walls with the top support streaching out approximately one quarter of the distance of the beams. This seems to possibly give the required support and leave the floor space wide open?

Would buttresses that support from 1/3 of the way into the beam not be more architectural (while providing needed support) and free up floor space? They can still be steel if you want that industrial look or you can go with a wood in keeping with the history of the building. Just a thought. Can't wait to see how it turns out.

That style of cast iron column/framework would be fitting for this type of building, a lot were extended or shored up over time, and they can look attractive if done well.

Clean up at the end of the day, of course! Every good cook knows you clean up as you go. $100k Euro is nothing for a kitchen of that size, I spent about $80k USD on a kitchen reno only a fraction of that size. You're amazing.

Beautiful columns. I paid for my renovations in a gut and remodel for my 1880s home's kitchen. Wanted to leave the hand hewn support beam open but the town made us add to it for thickness. Just our small kitchen was around $30k. A kitchen that size and with your thriftiness will definitely be a large ticket item but still a bargain.

My house, a 1952 bungalow, needed a kitchen remodel because the electrics started fires and the plumbing backed up sewage. It was $45 k, ad that was reusing the stove/ oven and buying many things at used, everything else on sale, and single mom me and my boys doing the demo.( sons: i can hit this with a hammer? I can break this? Me: break everything. Rip everything off the walls! Sons: wickedddddd!)

Billy, the space as a private residence it would be convenient to have two downstairs toilets when hosting gatherings. If the space is a public venue then 4 downstairs toilets would be a better idea, either way run plumbing for 2-4 toilets.

Are there specific time management tools you use to keep a home like yours maintained and Manage a sizable project like this simultaneously? It seems like you have a very clear head and you are able to take the whole project one task at a time. It’s clear to see you have built an awesome team, and have great friends, and have a supportive family and your dad could build a city all on his own, probably has lol. Is there any tips and tricks you could give in that area though? maintaining large projects,and managing large ongoing projects simultaneously. Thanks for the videos! Lol, you've gone demo happy! That ceiling holds a lot of weight. Over time, gravity will have its way. It's very smart of you to plan for the long term. Question: Are you opening up the fireplace and the chimney, or are you going to vent up the chimney so you can put a huge stove/oven inside the chimney alcove? There is this smashing 6-8 burner stove with 2 ovens I've seen that I think would be beautiful set into the chimney alcove. Steel and brass fittings and embellishments. Gorgeous!

Looks great you see potential that's what matters and look into any recycled things you get for kitchen especially pots pans utensils Etc! That can save a lot may be can find a sponsor for some things a designer for kitchens can save a lot in long run and find suppliers and find right products needed as for how this kitchen is going to be used like large functions small etc ! Don't want to expense equipment that you not really need but could rent when Needed!

5:04; timber beams with knee bracing to keep with tradition? seeing that it is indoors, you wouldn't necessarily have to use oak. Larch or Fir would be quite sturdy, also maybe a bit more cost effective...

You previously mentioned a crypt under the chapel and you have shown basements under the convent. Are you sure you have solid ground to be able to dig down for the coloums ?
