Theoretically Hunk is doing the hand gestures and whispering the same "spell" the Red Priests used to put El Gigantes to sleep so the plagas inside them wouldn't awaken, thus making them far less of a threat to keep around until needed. Except in this case, Hunk would be doing it to keep the plagas asleep so the target would actually die, instead of just going full plagas mode. It would explain his uncanny ability to instantly kill any enemy in the game that's possible to be melee'd, at the very least.
