• 1 red onion
• 2 garlic cloves
• 1 piece of ginger (about 2 cm / ¾ inch)
• 2 tbsp vegetable oil
• 200g (7 oz) fresh spinach (or frozen spinach)
• 400ml (1 ¾ cups) crushed tomatoes
• 200ml (¾ cup) plant-based cream (such as oat, almond, or soy cream, if you don't want coconut milk)
• 1 tsp cumin
• 1 tsp turmeric
• 1 tsp paprika powder (sweet)
• ½ tsp cinnamon
• Salt and pepper to taste
• Juice of ½ lime
Topping:
• Fresh herbs (such as cilantro or parsley)
• Crushed nuts (such as cashews or almonds)
