About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

My late aunt used make this when we were living in Thailand. She made them with large noodles and cut up quartered crabs and I have been hungry for this delicious dish for almost 50 years!!! Thank you so much for sharing!

OMG Pai! I made this for lunch today and at the risk of committing heresy, I like it a lot more than Pad Thai. The chili paste in the sauce is so good, and cooking the shrimp in it is just perfect. This is going to be a dangerous thing to know how to make this quickly and easily. :)

Thank you! I had this in Bangkok at a street stall and had not been able to find it since. Everyone I described the dish to said it was just Pad Thai with whole crab and I knew it was not.

What a coincidence, I was just looking at a Thai cookbook for noodles that my mom brought from Thailand to see what other dishes there were. I've never eaten this so this particular dish caught my eye and I thought it looked like Pad Thai. The next day, you have this video!

Thanks for a great recipe. Your written instructions are always very detailed and easy to follow, and since I haven’t been cooking Thai food for decades, I appreciate the fine details. I wish people wouldn’t always make fun of American-[insert culture here] restaurant food though. At the beginning, the restaurants probably had to adapt their own recipes based on what was affordable and readily available before Amazon and Weee! existed, and now people expect that taste. Also, even if these dishes are Americanized, they’ll still inspire some people to learn more and maybe cook them at home. They’ll find authentic recipes with a bit of research, a few cookbooks, and now online chefs are there to show people how.

This is my favorite dish since I was born and raised in chantaburi . When I cook this dish at home I usually use blue crabs for this menu .

This is a brilliant alternative to pad thai because it’s much easier to make and almost as good. 😉I have all ingredients ready except for the garlic chives. Unfortunately, they are hard to find where I live. Chantaburi brings back great memories especially those orchards that produce many great durian species. What I would do for a durian now!!! Dear Pailin, I love to cook Thai food and Pad Thai is one of my favourites. I seldom get to enjoy it because of the garlic chives which are not available in my country. I found it in Dubai but it is very expensive. But now that I'm in India, I'm still looking for it.

Notification Squad! As soon as I saw the orange colour of the noodles and the less amount of vegetables, I immediately wondered if this dish is the reason why North American pad Thai at least LOOKS the way it does. Man… I could totally make this right now, but the only thing I don’t have is garlic chives. Same with pad Thai. I can’t get them anywhere near me at all, so I can never make it… makes me so sad. I wish there was an acceptable substitute or something, but I know how important of an ingredient it is in pad Thai… sigh…😔

Red colored Pad Thai are very common in europe as well and waay below under a proper pad thai. Not sure why this trend started but people aparently like it.

I am struggling with making Pad Thai. Can't find the perfect ratio for the sauce (palm sugar, tamarind, fish sauce). Sometimes, I don't make enough sauce and sometimes I think I add too much tamarind :(

I usually make a big jar of sauce ready to use for pad Thai. That means you taste the sauce (palm sugar, tamarind, little fish sauce mixed) you make, and you know it’s perfect. Once you cook it often, you will know how much noodle you’ll make and that how much sauce you need.

Pailin, looks fantastic! But it’s a food myth that removing seeds moderates a chili’s heat. There is very little capsaicin in the seeds. If you remove the ribs in a chili, that will moderate the heat. But the seeds are often bitter, and removing them reduces any bitterness from the chilis.

Really means no offense but I strongly disagree. Koi Mee Lao is like a salad while this dish in a stir fry. Totally opposite from ingredients to methods. Not to talk that this dish need lots of ingredients from sea, something Lao has none. Very intresting that in recent year I see more and more of comment like yours, eg. mango sticky rice or recently the Laab Muang (northen style Thai laab) Pai made, whcih is very far from the point (eg. laab muang is very different from Lao style laab you can almot say they are different dishes/mango sticky rice need coconut milk, something almost no authentic Lao and even other region Thai cuisines (north and northeast along with the east like Chantaburi) use. Fascinatingly as a people who interested in sociology I doubt if it's the sign of people who lost track of who they are. Chance is that they don't even know about the characteristic of their own cuisine.

I love the idea of off shoot dishes like this. Cooking recipes are guidelines so, yes, you have to use your judgement. I'm almost always missing one main ingredient, bean sprouts, which I can't not get fresh without driving 2.5 hours. And canned ones just won't do. But I just have to enjoy the dish without them.

Many Thais does not like raw bean sprouts. Just omit it or replace with some lettuce. Or you can grow from mung bean yourself at home if you really like it.

if you plan ahead, and only want bean sprouts occasionally, you can grow bean sprouts yourself on a countertop. You can eat any bean sprout, and they are all easy to sprout and do so very quickly, but the ones sold as "bean sprouts" are mung bean sprouts. You can get mung beans by mail order very easily. They are very small dry and when rehydrated and sprouted you'll be surprised at how palm fulls of dry beans turn into big piles of sprouts.
