I found on wiki that "research revealed that when sucralose is heated to above 120 °C (248 °F), it may dechlorinate and decompose into compounds that could be harmful enough to risk consumer health. The risk and intensity of this adverse effect is suspected to increase with rising temperatures.[19] The German Federal Institute for Risk Assessment published a warning that cooking with sucralose could possibly lead to the creation of potentially carcinogenic chloropropanols, polychlorinated dibenzodioxins and polychlorinated dibenzofurans, recommending that manufacturers and consumers avoid baking, roasting, or deep frying any sucralose-containing foods until a more conclusive safety report is available.[20] Furthermore, adding sucralose to food that has not cooled was discouraged, as was buying sucralose-containing canned foods and baked goods." @@subzero6860 Sucralose is one of the most extensively studied sweeteners of all time. Every food and drug administration around the world allows sucralose to be in products, that are made both hot and cold. I dont think one study trumps all of the data. Water will kill you if over consumed. To answer your question, I personally am not sure of an alternative. You will have to do some research if you want to avoid sucralose as that is what most protein companies use to sweeten their products.

I noticed that a lot of protein recipes use why casein specifically. Is there a good way to substitute in whey protein isolate? Like adding additional of something to make up the difference. Just bought a 5lb bag of whey protein isolate to use with recipes just to find that a lot of them are casein instead and that it makes a difference.

@@Shadowlief Unfortunately not. Your recipe will turn out dry and chewy. A blend is absolutely a must.

Quick Edit: 3g lemon zest as mentioned in your video, not 2g! The chocolate chip tasted amazing and am going to try the blueberry today. You've helped me lose so much weight. Really hope you get a lot bigger, you have the best recipes.

@Exercise4CheatMeals I’d like to offer a technique that should yield even more blueberry flavor. Reserve half of the blueberries and heat with a scant teaspoon of sweetener, mashing and reducing till thickened about 1/4 of a cup. Set and let cool. Fold the other blueberries in with the batter. After portioning into the muffin tin take around 2 teaspoons of the macerated blueberry mixture and spoon it into each muffin, use a skewer to gently swirl the mixture in.

Sorry, I had to comment again because I just made these(blueberry) and wow..... these are the best monster muffins I've ever had, and that is no lie. I followed the recipe 99% of the way with just 3 deviations..... 1. I had frozen blueberries so I used those instead of fresh. This did add about ten minutes to the baking time but they were NOT dry at all. Moist and delicious. 2. I added 2 grams of pure lemon extract to the batter to make them more like lemon blueberry muffins. 2 grams was the perfect amount to give them that SLIGHT hint of lemon in each bite. 3. I didn't have the raw sugar so instead I weighed out 24g regular granulated sugar and mixed it with a drop of the lemon extract. Used it to top the muffins, and while it wasn't as crunchy of a topping, it was delicious and added some texture. I really can't thank you enough for this recipe E4CM. I've been a professional baker for some 20 years and these were far and away the best protein muffins I've ever had and they go toe to toe with any "non-protein" muffin you'll have. I can't wait to modify the base and try different flavors like double chocolate, pistachio, cinnamon, etc. Bless you, sir.

Have you tried making donuts or anything g else with this recipe? Also can you taste the vanilla flavor in the muffins? I hate the taste of protein powder wasn't sure if this pescience one was over powering too

I made the blueberry ones today and they were excellent, I also tried freezing them and they freeze beautifully which is great because it means I can meal prep these and have constant anabolic muffins, great recipe 👍

These chocolate chip muffins came out delicious! I made these by using a blend of 50/50 cookies and cream whey isolate (all I had) and naked casein. I am lactose intolerant so I actually pre-mixed the casein and treated with lacteeze drops. I used chopped dark chocolate chunks instead of chips. I used a regular muffin pan and made 12, baking at 300f for 25 min, checking often. They weren't dry at all and were so tasty! They also have 4 times the protein of a regular muffin. These are so great when you need to calorie cut while also hitting a high protein macro count. Nick hits it out of the park with this one!

Just made the blueberries one with a 12 muffin pan without liners and they taste phenomenal but just a heads up immediately take them out the pan or they up end up being too soggy from the bottom with all the blueberries

Made these with a blueberry protein powder and they were SO GOOD. Even better the next day. I used a mini muffin tin and had some left over batter so I used it today to make pancakes, so if you have extra you could always save it for that. Batter is a bit thick so you can thin it out if you want but i went straight into a pan and they turned out amazing.

So I just made the chocolate chip ones. They are great! Though I’m an idiot and didn’t buy brown sugar substitute… so I did 120g of regular sugar substitute and a splash of maple syrup as recommended online. And it came out great! So that is an option for those who want to try it but don’t want to buy all the ingredients they may not use if they end up not liking it. I also already had separate whey and casein protein, and did basically a 50/50 split and it was perfect. I also couldn’t find a jumbo muffin pan at Walmart so I used my regular one and just did 12 muffins instead of 6, and again, works great, so that is an option as well. Cooked a total of 28 ish minutes, but check after 20, and go from there

Hey Nick! These looks absolutly fantastic, gonna get my hand onto some xanthan gum to try them soon and hopefully they'll become a regular. I am however a HUGE fan of lemon stuff, and your lemon protein muffins are absolute killers. Do you reckon it's possible to adapt this jumbo muffin recipe to the lemon version of your precedent muffins? Not sure how to adjust the ingredients with the lemon juice.

Just found your channel. These recipes look amazing and I cannot wait to try them. I’m so BORED with my breakfast options and I am really looking for delicious high protein options that are NOT a protein bar or cottage cheese. I enjoy my coffee in the morning and I like to EAT an actual bread type breakfast not yogurt or a smoothie. I want to eat with my coffee and options are limited when I’m trying to lose weight even when sticking to healthier things like my Daves Killer Bread with an egg or avocado toast etc. I can’t WAIT to try to Blueberry one with that lemon zest on top. Can’t wait to check out your other videos. Great editing, very entertaining and funny. Just subscribed.

Just tried these tonight! They're amazing! I am extremely sensitive to protein taste, and don't usually like any protein desserts. Even my husband loved them and he is pickier than me when it comes to any kind of protein taste. I used the gold standard Vanilla casein protein powder after watching Kenny fischers review. 💪🏼

Chocolate Chip muffins were amazing! I want to try the Blueberry next but do you just add the granular swerve for that or are you also adding 60g of brown sugar swerve? The mix in the video looks like it did not add it maybe because the blueberries add sweetness but just wanted to make sure

Cake flour would work great help maintain a softer crumb. Also, imitation vanilla can easily (possibly necessarily) be substituted for vanilla bean paste. It’s worth it, and significantly better tasting than imitation vanilla.

Has anybody tried to make a bread loaf instead of muffins with this batter? I’m looking for a little bit faster and easier. Both were good, but the blueberry takes the cake. I also only used whey protein not a whey casein blend and it turned out just fine.

These are awesome! So worth the effort. However, corrugated baking cups stuck badly, even with spray oil. The tulip style in the video are much better.

I made mini cupcakes with this instead. Batch yielded 24 cupcakes (69 cals/2g fat/5.5g Protein) and tastes really good. My kids love them. Recommend 100. Love the book by the way

Never in my life have I had something tasty that was baked from protein powder. But THESE MUFFINS are so good!!! I don’t know if it’s the recipe or the PEScience protein powder. I don’t want to know, because obviously I don’t dare make them with any other protein powder and I’ll stick with it. Thanks for the reciepe!

I made the blueberry muffins last night with a bit of a twist. I didn't want to waste the protein powder that I already had, (chocolate casein protein lol) and decided to use it with vanilla whey to make a blend. I didn't know what to expect, but they were very delicious! I grade my cooking based on my siblings' reactions to them (they're picky eaters) and they both said they liked them a lot! Thank you for this recipe, a lot of your foods have been very easy to make and delicious to try!

Thanx for the recipe. After trying this and following exactly: Taste and texture is on point (chocolate chip) However, for anyone thats going to make these, there is a reason why Nick made these is such big, deep cups. If you make them in a smaller muffin cups, they will rise up and the collapse. What you will get is a very flat top muffin. Not thats is a bad thing, but it will not look as pretty :) Ohhhhhhhh and I am making these with the cookies n cream PES powder.

This muffins are phenomenal and so easy to make. I use a 12 size muffin pan and it takes roughly 22-24 minutes to cook (still underdone and gooey at the top, but it tastes better that way once it cools) I’ve made this recipe twice, and the first time I made it, I ate all the muffins in one day hahah

Like 22-24 minutes?! 0.0 I use a 12 quantity muffin tray and it takes 10 minutes @ 300f or 150c (turning once after 5 minutes) - maybe you dont have fan assisted then? Like you said - slightly underdone looking on top but they cool down fluffy and moist not wet or gloopy inside.

Looks great. Unfortunately, in Brazil, some of the ingredients aren't available, so I will try some alternatives, like substitutions for the Swerve sweeteners (I don't know there was a brown sugar substitute until I watched this video). But I'm actually curious to how it tastes, since muffins are not very common here, but looks delicious.

Is erythritol available in Brazil? I believe thats the main ingredient in Swerve, so if you can find that that might work. And maybe add some molasses or sugar free syrup to mimic brown sugar.

Fala amigo! Eu fiz com eritritol e um whey concentrado normal hoje, deu bem certo, mas eu tive que colocar uns 40g de pasta de amendoim em pó pra compensar a diferença de textura que o whey e a caseína dão, já que aqui no Brasil eu não achei um blend de whey/caseína como ele usa no vídeo

Help. Mine aren’t rising as high as yours are and I am following the recipe to a T except I’m using Isagenix protein powder. They taste delicious but are Coming out a bit on the moist side and falling a little after they come out of the oven. Wouldn’t say they are caving in but they are falling. I wait until they don’t jiggle before taking out of the oven. Thanks !!! I made both recipes. They are delicious.

I also had a question, I wanted to make the anabolic Oreo McFlurry, but the ninja blender and scale you linked in the description says they are out of stock and don’t know if they will be coming back.. do you know any other ninja blender I could get that would work? While I generally enjoy protein bars on my cut, these seem like fun to make and share with friends. I'll stick with Felu by fit's banana bread recipe for my typical pastry dish, but I'll give this a go.

After trying it, I found the muffins to be very good! Might have to make more at some point, I love the moisture and flavor of these, and the chocolate chips make them really good as well!

Can't wait to try these! After having a lot of success with the deep dish pizza and OG mac and cheese I'm ready for my next E4CM adventure. I currently have a pop-tart habit for my weekend breakfast. Two of these muffins will be WAY more filling for about 25% more calories. Feeling optimistic to start a healthier habit with these 😃

You can actually use something like Skyr, greek yogurt or blended cottage cheese if you don't have casein protein powder. It won't be the same but it's close enough, I've used whatever I have on hand for delicious banana protein cake many times.

@@pierrezhu934 No the yogurt or quark has other stuff in it as well like water, lactose etc so it's not the same by weight. How much I use is mostly based on guesswork based on experience, which is how most cooking is done once you get into the intermediate or advanced stage. My recommendation is start with like 200g per batch and leave some other liquid out in exchange, and if your finished product is too dry you use more next time, if it falls apart you use less. Protip: If your dough becomes too wet because you put in too much yogurt some oat fiber, psylium husk or guar gum might thicken it up again so it's still usable. Oat flour or even rolled oats work too because they absorb liquid but they also add significant bulk and calories, so careful with that.

I used Quest (Vanilla Milkshake flavor) which worked perfectly. I also used a metal muffin top pan and made 12 muffins instead of 6, since the cups are shallow. I baked them for 25 minutes.
