Regarding that Aunt Waree spoke about "the year number 48" means the number of Buddhist era or Thai calendar, which is the year 2548 or the year 2005. So, she has been opening the restaurant for about 17 years.
Lately I found more and more westerner could handled spicy foods better than me a local.

Today's Pad Pla dook is one of my favourite dishes, but I think Aunty uses Gra Chaai and not Galangal. You are so hyped today, that means the food must be really, really delish! 😁. Amazing! You're really doing a great job! As chefs and Thai food junkies we really appreciate your style and the way you do your reviews. Very thorough and honest (when you don't like something you just say it and don't pretend and roll your eyes in fake amazement) and no nonsense. And you speak Thai which I really respect (not just because you're from England XD ). We're watching all of your episodes and preparing our food map as we're coming back to Thailand in the new year and we're realising we really don't know (or rather didn't) as much about thai food as we thought. We wanted to ask you a few questions: 1. We have a 7 year old daughter that eats all kinds of food but doesn't have much tolerance for spicy food (yet). Can you suggest us few dishes that your son enjoys that are not to hot/peppery? 2. Where can we find some great duck dishes? soups, stir-fries, rosted/peking doesn't matter, we love them all! 3. Same as the previous question but with crab. Doesn't have to be Bangkok, we'll be traveling for a month and a half, north, south, koh pangan and a bit of Laos. Thanks again for what your doing! Gary, those greens are called Cabbage Sprouts, one of my fave, usually stir fried with meat or seafood. Looks like a mini cabbage. But not easy to find in regular stall..

that pla sa lid is common and delicious. it's sun-dried and slightly salted. normally, we just deep-fry it and eat. but yes, it tastes very nice to add deep-fried pla-sa-lid in a fried rice.

You're so right about just walking around and randomly finding a real gem in Bangkok. After trying your recommendations in Talat Noi, which were all fantastic, I started just wandering around on my own with no direction. Going up and down city blocks and back alleys finding awesome little food stalls with locals all sharing a common interest, good food. I would consistently clear out kitchens (everyone except the cook) after ordering my phet phet dishes. I typically sit at the back of restaurants so I would see a wave of customers coughing before the chili fumes would eventually reach me. 🤣

Dear Gary, Pla Slid is the most popular and most delicious salted fish in Thailand. Normally Thai people eat Pla Slid with porridge, but Pla Slid can also be used in other dishes.
