Mmmm! I use maple syrup in my peanut sauce too because: 1. I’m Canadian and we do love our authentic maple syrup; and 2 adds a ‘caramel-y’ flavour which is super delish. I’ve used sun butter and (once) golden pea butter to make a similar sauce for friends who are allergic to peanuts, and I substitute the peanuts with cashews…as we say here in BC, that’s not too shabby! (Not a huge fan of pea butter but the sunflower seed butter is quite good.) Oh, and I loved seeing the little peanuts hands helping cook -awww!

My husband is cutting back on meat in general and completely cutting out red meat so these videos have been a godsend 🙌🏽 I’ve tried a few recipes now and I swear the hubs is falling in love with me all over again after throwing down on some chickpeas 😂😂 haven’t tried tofu yet but we’ll see how it goes 👀🤣 I know this noodle dish is gonna hit though ..can’t wait to make it 👏🏽🥂 thanks for all the inspo, Nard Dog 😄🙌🏽

I love this recipe! I've been making variations of it for ten years! It's especially great cold! (Store plain cooked noodles separate from other ingredients with a little oil to keep them from sticking)

Made. Good. Would cut down just a bit on the ginger and half the lime. I wouldn’t boil the bok choy next time. I’d sauté with bell pepper, garlic and ginger. I’d also definitely add more veg. I used PB2 to cut the fat and it was a good call. Filling. 👍🏼
