NOTE: For those who make it, I say to add 100g of flour, but MEANT to say *1000g* of all purpose flour for the red gluten ball at 3:27.

Thank you so much! The sauce is a really easy component of the dish to make and the mac powder makes awesome mac and cheese on its own. I always keep it stocked in the pantry :)

Awesome! Sounds really tasty; I’ve thought about making a carbonara recently. Dunno if I’ll make a spherified yolk, but this version sounds delicious!

Thanks! Yeah, I was really happy with how it turned out. It’s a meat and dairy heavy dish, so it was a fun challenge to make.

Hi! I have a question. What does MSG do in this recipe? Thank you :) Ps. My heart broke a bit when white ball said goodbye to red ball

Ha! Yeah, they had really bonded. MSG just adds to the umami flavor of the dish and is optional if you don't have it, just replace with same amount of salt.

I've spent a lot of time looking for unusual flours, so learning that I could just make most of them in a blender was a game-changer.

quick question ! do you really use just 100 g for the red seitan ball and 450 g for the other? that doesnt seem right? the red ball looks bigger?

Good eye, SO glad you caught this. I said 100 but MEANT 1000g. I'll amend the description. Thanks again so so much for catching this.

You can add the final yolk to hot (but not boiling) water for 10-15 min and that will do the trick!

Can the egg yolks be made ahead of time and be stored?

No, unfortunately, BUT you can prep the alginate bath and yolk mix beforehand and pop out a couple whenever you want. The bath will keep for about a week in the fridge, but probably longer.

I would LOVE to know what you think of omni spam (vegan) in this recipe! I'm going to try it soon and I never ate spam in my life but I'll try a vegan version of anything! 🤷‍♀️😆👍

Thanks! It's monosodium glutamate, you can find it in US groceries under the brand "Accent"
