The reason chaos emeralds come out of their behind is because chaos emeralds can warp time and space to create pocket dimensions that they can enter. This is what the special stages are, and the reason rings float is because residual chaos energy is inside of them, and sometimes they combine into a giant ring, leading to a special stage. I personally like to think the 6 of the 7 Chaos emeralds used their power to give Sonic and any friends he made and any friend those friends made their own little pocket dimension that they could use as a storage area when they undid Eggman's destruction at the end of Sonic 1. As I'm sure many forget but the chaos emeralds and master emerald are living beings who can think and feel.
