I think she didn't go for longer with the broth (and added aromatics early) specifically because she was using an already cooked chicken. A lot of the collagen has already gelatinized during the roasting process, so there is less to extract during the boil compared to raw chicken pieces.

Nah, as a Malaysian myself they are incomparable. Half-boiled eggs are just budget version of onsen tamago with how many restaurants fucking it up with the yolk being nearly-cooked solid. But for onsen tamago, the egg whites are silkier, softer but somehow stil maintaining the texture.
