i personally would replace the cheese in the ramen recipe with a beaten egg at the end when mixing; it really helps emulsify the ingredients and adds the creaminess you desire.

How do you do it? I never get it right and end up scrambled eggs in my noodles instead of creamy noodles (I also try to stir quickly and keep the temperature on low)

@@vitushka01 look up egg tempering on youtube and try even lower temperature and add the liquid slower

@@vitushka01 usually adding the egg at the end with the fire off and adding the water too. Traditional carbonara is made this way (no cream just egg) so if you look up for the recipe you'll find many examples too :)

Thank you for these easy recipes. Will definitely try out them. I would add some other spices to taste. As to the soup, I would use lemon juice instead of vinegar or sour dried plum. I would add sour cream and thyme. But then, I guess it would be a different soup.

So I have tried making the first dish, prep time takes about 10-15 minutes with washing veg, chopping and peeling garlic, chopping chili, frying egg for 2. The dish is lack of some taste to it, there is a strong chicken pungent smell, I used perdue's minced chicken meat. I think it might be a better choice with pork or beef. I would suggest to add ginger to remove the it. I think adding a touch of sugar and white ground pepper would bring the flavor more.
