I am always totally amazed at the end of a program & you are wearing white blouse and you manage to keep from dripping sauce on yourself!!!! Amazing!! And you are using chopsticks!!! You are amazing!!!

It is so hard not to stir. I like my protein to be browned/seared. Sometimes I scoop out the liquid into a bowl and then add it back in after the meat browns. It seems to work. Sometimes I over crowd the pan and I don't want the meat to steam I want it to brown. Ground beef has a lot of moisture in it. I am trying to work on this. Thank you for the wonderful videos.

I made the hoisin beef noodles today, I used #3 rice sticks in place of the noodles as that was all we had... All that I can say is OMG!!!!! So freakin' delicious! Maybe the best thing I've ever made with ground beef. I did add some ground black pepper too. I will make this again and again, thank you so much Marion!

I just 'found' you but already addicted! There's quite a large Asian community here so I all ready have a couple of the ingredients you use, and can get the rest fairly easy too I hope. I've never known what to do with glass noodles! My mom bought some at the store thinking they were regular rice noodles. I tried putting them in a soup, but they got a bit mushy🙈 i love your videos! I feel like i can smell all the ingredients as you're cooking and it makes me soo hungry 😍😂

Singapore curry noodles. Just soak the glass noodles in hot water, do not boil.

I love that these recipes are very adaptable. I didn’t have cabbage so I used Asian greens in my beef noodles and it was perfect. Surprised there was no chilli in the beef noodles though!

The last time I went to Woolies, the pasta section was stripped bare but there were still plenty of noodles in the Asian food section. On one level this seems to be a sad reflection on Australian culture but, hey, at least I have noodles.

On the positive side though, Australian food culture 50 years ago would have regarded the pasta as exotic immigrant "wog food" and there would be no Asian noodles at all. Rice has been stripped from the shelves too, but my grandma only used rice to make rice pudding! The ingredients for the boring old Anglo-Australian staples (meat, potatoes, peas and carrots with a squirt of tomato sauce) would be those stripped from the shelves. We Aussies are on a wonderful journey from racist mono-culture to vibrant multi-culture - haven't got all the way yet, but we can be proud to have come so far.

Thanks for all you do. Your mince is always so “fluffy” - that is the strands are separate. Here in the US our ground meat is always pressed into a block; I have to almost chop it apart with my spatula! Do you grind your own? Or does your butcher grind it fresh for you, or ...?

Dorothy, where do you live? Prepacked ground beef is awful, I agree, but most areas in the US nowadays have at least one supermarket with an actual butcher and a display case with ground beef. If you can't find one, it's very easy to grind your own in a food processor. You won't get those fluffy strands but it'll be far better than those awful bricks of beef.

If I grab mince from the supermarket here in Australia (That's if I can find it at the moment...) it's also squished together in a block as well. My trick is to use it a whisk when I cook it - it sounds nuts but it works! I'll give it a quick cook in a high sided pot because it's easier and won't go everywhere, and then put it into the wok or pan to brown up nicely.

Yes I think it's because here in Thailand the meat is often freshly ground by the butcher in the mornings rather than sitting around or being squished into blocks. I find the easiest way to combat that is to get your hands dirty and kind of break it up as you add it into the pan. But not everyone likes to get their hands dirty...so using your spatula to break it up is fine too :-)

Love your recipes. Already did your hoisin beef noodles when you uploaded it last time. It was really good. I made some tweaks, using fresh wheat noodles which I did from scratch and adding some mushrooms.

Hoisin sauce and doubanjiang are two ingredients I have that I don't use nearly enough. I made the hoisin beef noodles tonight and oh boy...were they good! I used half a bag of superfood slaw mix (which has Chinese cabbage and carrots but also broccoli, Brussels sprouts, kohlrabi, and kale) for my veggies. Can't wait to try the hot sauce noodles next! I can't have oister sauce I've an allergy to it but what if I just used hoisin and dark soy sauce with dark vinegar as that's the only vinegar I have.. Would that work just as good and delicious? I absolutely love these recipes these are my all time favourite food in the world. I'm gonna make this at the weekend I can't wait mmmmmm yum!

Won bok is the Cantonese name for that cabbage.. also know as wonbok wherever there are Cantonese about.... could you use chines Black vinegar? it's not as sour... It looks so salivatingly delicious but where's the chili? ( in the beef noodles)hahaha ; the shanghai one looks like mapodoufun on noodles what great idea! and woonsen is my most favorite noodles in any dish!
