I'm in Eastern North Carolina and I moved my (first) "every bit counts" to July because #1 I can get things in the ground sooner so my harvest starts sooner- my tomatoes have been done and #2 I'm a teacher and August can be busy. I am so glad I made the choice to preserve aggressively early because hurricane Debbie killed much of the garden. My August goal is to preserve or prep something at least once a week as I've gone back to work and will have students seated in class by the end of the month. As a viewer, I really appreciate how you encourage everyone to find what works for them. I'm a relatively new canner and I put up shelves of jars this summer 🎉

I live on the Florida Space Coast so I sympathize with you about hurricanes ruining a garden. Dumping salt water on plants is not good.😬

@@JT-2012 yep, I remember Fran and Floyd hitting us pretty hard. And the Neuse River flooding! Now they have put the Greenway trail there so it no longer overflows onto the road.

This is the 1st year I've done soup base and meals in jars....so smart❤ We are just 2 older retired people and I don't feel like cooking all the time, so it's perfect for us!

My favorite way to freeze corn..put the entire ear husks and all directly into the freezer. The husks will keep the flavor, and the kernels will taste like you just picked the cob. No need to pack them in any kind of storage bag or container. I have baskets in my freezer, so they fit easily in them. Even if you’re going to can them right away. Just put the extras in the freezer. I have even purchased corn in bushel bags and put the whole thing directly in the freezer. I have been doing this for 60+ yrs.

Just a little tip on the bitterness of the tomatoes when you can them, if you put a carrot in your tomato sauce when you're cooking them it will help with the bitterness and just discard the carrot when you're done. I miss candy it's just myself and my son so I don't can a whole lot anymore. thank you for sharing your experience with us .

There are just two of us here but I grew up doing what you are doing. I never understood why we didn’t get a back yard to play in but I understand now. Don’t get me wrong, we lived right on the city lines so we had great neighbors to play with. Growing up poor, preserving all of your winter food, I understand why considering the state of our economy now. I still garden, can and preserve. Now I just stock up for others just in case. It’s just how I was raised. You are teaching your children how to take care of their futures. How wonderful. When others walk in circles wondering what they do next, your kids will be living the life that they were made for.

Sometimes when I have a small amount to water bath I use my asparagus pot. It's tall and has a rack for my jar to sit on. It eliminates dealing with a huge pot.

I don’t know how to do techy stuff. But wanted to share I’m canning 12.5 lbs of cherries and making turkey stock today. Thank for the encouragement to clean out my freezer. I’m 66 and always busy so it’s not every day but anytime I don’t have to leave our 25 acres I have canned this month. Thanks again 😊

I wore out my kitchen aid immersion blender!! It totally died. Had someone look at it to see if anything could be salvaged. Ordered TWO new high powered ones, so one is here as back up lol. Been blessed with being able to "rescue" slightly blemishes tomatoes from a local farm because their customers won't buy them. I get a call every other day about cases. I get to feed my family and friends, and bless other people that can use them!

Friday morning, I canned 13 quarts and one pint of veggie broth. Next I will be canning pinto beans and homemade chili for my husband & I.

Dear Jessica, I’m watching this and thinking how lucky you are when pregnant not to have nausea. I would have LOVED to have been able to go into the kitchen, let alone can & bottle. I had severe hyperemisis. - all day & night “morning sickness” for 38 weeks. I’m in awe of your energy and knowledge. You are a great mum & homemaker. Peach jam is lovely in Jam Tarts - short crust pastry individual tarts, a great hit with children as a treat. Or muffin filling.

I was sick like this for both of my pregnancies. It is miserable. I've since learned it is a magnesium deficiency. ❤ Also, mint tea helps so much with nausea.

I LOVE that I can double stack my pints! It saves me SO much time because I can outside. South Arkansas heat is no joke even with an AC, so my time canning outside literally means, I have to stay outside. And it’s such a time saver! I’m hoping to save for a large all American so I can do that with quarts. We are a large family too and I mainly use quarts. With a very large garden, I’m canning ALL summer long.

Our garden suffered through this drought but we have been blessed to know a farmer who gave me roma tomatoes. A friend also had 3 peach trees and offered them free as much as we wanted to pick. Our youngest daughter bought a home and it has a pear tree. So last week we canned 80 pints of pears, jam, sauce and syrup. Made tomato marinara sauce and today after church is peaches. ❤🙏 Can't wait for that little one ♥️

Freeze dried corn is amazing. We don't like canned sweet corn, think it taste burnt. Freezer corn takes up so much space. We love it freeze dried.

We got 33 Quarts of tomato juice canned and 9 quarts of leeks frozen last week, but I'm hoping to do more variety this week. We got 2.7" rain yesterday, so hopefully the tomato harvest won't be stunted too much.

I am so thankful for this challenge, because it has given me the push I need to stock for the winter. I was blessed by my sweet husband with a freeze dryer, so the freeze dryer, my canners, and dehydrator has been buzzing 24/7. You are such an encouragement and blessing. Thank you. GOD bless

I try to preserve or prepare something everyday. No matter how small. Even if it’s cleaning out a cabinet and taking inventory. I go through my canned food. Anything at or over 5 years old , it goes. Things get lost in the back , lol. Plus inventory at the same time..

Great job Jessica! You are so efficient and a great steward of your land/garden! I am in NE Louisiana so I certainly have to start my every bit counts challenge way earlier than August! Our tomatoes, jams, jellies, purple hull peas, baby lima beans, squash, zucchini, peppers, etc. have been preserved for weeks. Three upright freezers and a 21.7 cu ft. chest freezer are all filled to capacity with chicken, beef, pork, venison, fruits, vegetables and butter. Now I am doing things like adding to my large stash of chicken stock, bone broth, and beef broth, canning soups, beans, stews, chili, chicken, beef tips, meals in a jar, etc. I am going to a great Farmer's Market in MS next month to get three bushels of apples to eat fresh and preserve. All of our Azure bulk foods were delivered last week. I have one more Azure order for jars and a couple of things I forgot. Already have almost all toiletries, cleaning supplies, etc. purchased. Will soon be fully stocked for 12-18 months and that is what I strive for every Fall. Feels great!

It’s been a productive week. Green beans, peaches, plum jelly all canned and ready for the pantry. Zucchini and celery for the freeze dryer. Tomatoes and peppers are ripe so salsa, spaghetti sauce and tomato soup are next. I have Macintosh, Yellow Delicious and Jonathan apples in abundance this year so they’re waiting for an opening between everything tomato. I enjoy the inspiration from this challenge and look forward to new ideas every Sunday. Happy preserving.

Looking forward to seeing the full pantry video. Great idea to make the soup and chili bases for those days that are too busy or to give yourself a break. Its so satisfying to just pop a few jars into the pressure canner for a great healthy home made soup or chili. I chop the little bits of peppers and onions and celery that seem to be left behind each week. They stay in the kitchen freezer to use up the following week as southwest omelets or salsa. Its great to have little bits to add flavor but more importantly to see it turned into flavoring instead of compost. Does anyone remember the Soup Starter they sold years ago and the free container they gave out to keep in the freezer. You added veggies, etc from meals and then used their soup starter seasoning and some meat when the container was full. Thats what started me saving the little bits although I found I preferred to save them separately for more options in using them. Enjoyed this video very much. So fun to see the weeks effort all together on the table. Are you using the freeze dryer much right now? Thanks for a happy positive video!

Great accomplishment thanks for taking us along. Over the winter you might want to reseal your countertops to ensure longevity, after all they see allot of heavy use. We’ve been really content with boiled linseed oil, makes them look just like new.

If you want to freez corn on the cob just throw it in the freezer with all the husk and silk still on. No need to peel or blanch. I do it this way all the time and it still tastes just like I picked it fresh. We just finished last years corn and it was really good

There’s a really yummy recipe I made to put more into jars and not have waste (I don’t have chickens or animals that I could give it to), but with the cobs that are left from taking the corn off is to make a corn broth from it. I then add some corn, onions, garlic, a little bit of chicken, carrots, celery, potatoes and the spices I like to use are salt, pepper, paprika, thyme, parsley, and have a corn soup that I jar up. Use up what I can, you taught me that, thank you for all your help and teaching me to think about how I spend my money and time with food and having everything be used up.

Great video, as always! And I always like your ideas. They help me to think through the things I use. I've almost always canned single ingredients, but a couple of years ago I decided to can pork stew and butternut squash soup. Oh my, were they ever good! I still feel a need to have single ingredients on hand, but it's so nice to have something to pull off the shelf and heat-n-eat!

Here in the NW UK where I live it’s been a poor summer. This week we managed to buy two boxes of tomatoes, my allotment tomatoes are still some way off and are only coming in small amounts. So they’re now canned. Loved watching your video and aim now going to have a go at cranberry salsa with some bought cranberries and home grown produce. Everyday I’ve been picking a punnet of blackberries and it’s building up along with the other bits and pieces I’m harvesting.

This week, I dried cucumbers (for tzatziki dip mix), canned peach jam, canned peach corn salsa, canned peach salsa, canned green beans, frozen peaches for smoothies and canned peach rum sauce. Thank you as always for the inspiration, Jessica!!

@@betterose9167 .25 c dried cucumber powder; 1 Tbsp dried dill; 1 Tbsp dried mint; 2 tsp dried onion; 2 tsp dried garlic; 2 tsp dried lemon (or add fresh juice/vinegar at time of prep); 1 tsp salt; and 1 tsp pepper . I usually grind my dried herbs and cucs in a coffee grinder or blend everything in a mortar and pestal. It makes about .5 c mix power. I usually mix it with about 2 cups of greek yogurt. Sometimes i add a little fresh cucumber in it, sometimes i add other fresh herbs or feta or tomatoes. Once it's all mixed, let it hang out in the fridge for a couple of hours to come together.

@@betterose9167 1/4 c cucumber powder, 1tbsp dried dill, 1 tbsp dried mint, 1 tsp onion powder, 2 tsp garlic powder, 2 tsp lemon powder (I dehydrate lemons, then pulverize them, then dry again - you can always just add a couple tsps of fresh lemon juice or vinegar when you prepare), 1 tsp salt 1 tsp pepper. When preparing, I mix with either 2 cups sour cream or Greek yogurt and let sit for at least two hours in the fridge. I usually add in some fresh tomatoes or cucumbers as well.

Even though I don't do these things you do like homesteading and canning I love to watch your videos. I've been following you since your baby boy was about 1 year old and it's so cute to watch him and the others grow! I wanted to tell you that you look so beautiful when you're pregnant! Good work! Although I prefer canned corn to frozen, when I decide to freeze some I do find that not blanching the corn prior to freezing makes a better product. I no longer blanch corn on cob or kernelled corn. Well done.

We canned 12 pints of salsa today. And honey is ready to harvest. Hoping to get some balsamic onion jam put up this week.

We feed wild ducks in our backyard and a couple of kernels made it to the garden. So we had a surprise w a couple of stalks growing. I was so thrilled but something gobbled it up. I was so disappointed.

This week I basically just dealt with my herbs and potatoes. Someone dumped a sweet little kitten in our backyard so I became an unexpected kitty mama, totally unprepared! Then I wrenched my back... 😏😏😐😐😕 Lousy timing

I’m learning how to pressure can from your channel. Canning has always intimidated me. For now I’m water bath canning (what’s safe to do so), and fermenting. My goal next year is to invest in a pressure canner and every time I watch you I feel more confident and look forward to expanding my food preservation skills. ☺️❤️

Thank you for sharing how you did the southwest soup. I planned to do it last year. I actually still have the peppers I prepped for it in the freezer. I just was put off by the tomatillos it called for. Tomato sounds much nicer and more affordable.

The four jars canner would be great. I can mostly in pints. I’m happy for you as I know you can in a larger quantity than I need to. I’ve been busy preserving every day. Today I am rendering lard and tomorrow I will w making pork broth and probably canning pulled pork as I am smoking a pork butt today. We just had a hog butchered and the freezer is very full.

Jessica, maybe I'm doing it wrong, but for the last 2 corn growing seasons in a row, I have just purchased my corn at Walmart, brought it home and shucked it, then just run some cold water over it, and bagged it up and put it into the freezer, and it tastes just fine. I think what I am trying to say is, if you don't like the texture of the corn after blanching it, don't blanch it....ijs.

You rubbing your baby belly, brings me back to my pregnancy days, wow 36 years ago was the last one. But I loved every single moment of my pregnancy days. We sure are incredible women, the fact that we are incredibly resourceful in caring for our families needs while growing our family at the same time. Your are a joy to watch. I am going to have to try out your chili base. I cut raw corn off the cob, and freeze dry it, we love the fresh flavor when we use it.😊

That southwest soup looks AMAZING!! My challenge looks a little different this year. I do not have a lot coming in quite yet. for 2 reasons. 1- this is my first year with chickens and they got my garden HA! 2- we are having a very late season this year here in upper North Dakota. So i am getting a lot of food prep and meals stocked up which for me, is so wonderful! I adore seeing that little bump, Jessical. It is so wonderful to see another little blessing growing. You are such a wonderful mommy, and your family is such a blessing to so many! Thanks for sharing:)
