Being a recent widow, I've had the unpleasant, although rewarding, tasks of trying to winterize machinery, cutting wood, you name it...everything my sweet husband always did; plus everything I've always done. It's kinda rough right now. I like your videos.

Seeing your fallen tree on your fence,we were hit by hurricane Helene. We have around 75 white oak trees down on our property. We were without power for almost 10 days. What I've learned from this is to prepare for disasters. Were going to saw mills the trees, build a cabin, have wood burning heater, generator with LP gas,and food ,water prep.

Wow! You have a mess on your hands with that many trees down, they will make excellent wood for burning in a wood stove. Prayers to you while cleaning up and starting your prepping, although I hope there won't be a next time for you to have to have your preps.

It's wild to me that people get on you about "only" eating canned fruits and veggies in the winter. Which I know is not even true for you and your family, but even if it was, it's still nutrient dense and wonderful! So many people eat hardly any fruits and vegetables at all. Keep doing your thing :). Thanks for sharing!!

I agree! Honestly, if we ate seasonally, no one would eat fruit in the winter. So, the fact that she preserves them for her children is a win!

For new home canners: I took advantage of the magazine offer a couple weeks ago. I received both magazines this week. I enjoy both, but must warn newbie canners that Jackie, the “expert” in these magazines, does promote some unsafe canning practices without disclosing “rebel” canning. For example, on page 41 of the Fall 2024 Self Reliance, she promotes canning brined corned beef. The NCHFP specifically says cured and brined meats are not safe to home can, because the curing or brining changes the density of the meat. So do your own research when looking at a canning recipe/method to determine the level of risk you are willing to take.

On Sundays, after devotions and Bible readings, it is time for "Miss Jessica." How I do look forward to you saying, "Hello, Friends, it's Jessica." Your videos are a treat for me and it is so enjoyable to check in and catch up on all your doings. Yet again you have beautiful young children helping with apple projects and we even saw Adam. Thank you for making your videos and you truly have a friend here (a much older Gram with 5 grandkids who admires you greatly!). God Bless all of you.

I’ve been doing much of the same. Final harvest before 6 inches of snow on Friday. Time to get the garlic planted, harvesting the cabbage and making sure the corn for grinding is perfectly dry before storage. This is my first time doing grinding corn on a small scale. It’s a favorite time of year with apple harvest and today will be spent making sauce. Chili was definitely on the menu at my house as well. Looking foward to a little rest in the coming weeks but for now it’s crunch time with the garden “stragglers”.

Good morning from Michigan! This year I ordered Candy Roaster squash to try from Baker Creek Heirlooms, I planted 3 seeds and the plant flourished! My harvest was 26 squash and they were all over 10lbs with the largest being 16.4lbs!! The taste is sweet and creamy. I have been baking them whole, then freeze drying and powdering them. Delicious!

I was in your neck of the woods (I believe) this week in Northwest Ohio. I was in Hancock County, near Findlay searching for and finding my great grandparents, great, great grandparents and greatx3 grandparents graves. The greats and great, greats were in the same cemetery (Union Cemetery) and the greatx3 were about 3 miles down the road in Big Lick Cemetery. It is such beautiful country in that area with all of the corn and soybean fields. It was beautiful weather and the experience of finding the graves was truly moving for me. So many lovely old farmhouses too!! Wow! Kept hoping I’d see one that looked like it might be yours!😂

Did your tree coming down have anything to do with Helene? WNC here, and I don't know what kind of coverage you see on the media but we have had trees galore blown down, interrupting power services to a very large portion in NC around Asheville, other surrounding counties, and other states such as GA and TN. Mostly power is restored except where houses and even towns were washed away. Drinking water is a problem for city dwellers; anyone who doesn't have a well. Continue to remember this area in your prayers.

We have a small orchard here in NW Ohio. Our FAVORITE is Gold Rush. Jonathan were an old favorite, but yes, they don’t last long. Our yellow delicious are good keepers, as well as Liberty apples. Macintosh are the best for dehydrating slices. Our harvest is minimal this year because of a late hard frost. I plant my squash plants after July 1st and rarely have squash bugs. I also found Buttercup squash (very prolific!) is BETTER for pumpkin puree than pie pumpkins. Much more dense flesh, less watery than pie pumpkin flesh.

I wanted to share one of the ways I use butternut squash that I adapted from a video of yours. I make a soup with butternut squash, carrots, onions, garlic, chicken, chicken broth, and herbs. It is so delicious! I love this soup so much that I eat it several times a week. I make a big batch and freeze it in single size servings. Single servings work for me since I am older and my children no longer live at home. I tried canning it, but the flavor changes during the canning process. Thank you for your wonderful ideas.
