There is nothing any prettier than all one jars full of home canned food lined up on shelves. My husband & I were married 51 yrs before the Lord took him home & I canned everything most of r marred life & loved it.

I was watching your video from April 14 I believe, and you were taking down laundry from the clothes line. It brought back memories of my Mom hanging the laundry out daily, we didn’t have a dryer for a long time. When I got married we moved to Idaho and had what’s being called now a homestead. Back then it was just our home on 2 acres we chickens and rabbits and 3 goats. It was so fun I loved it. I always hung my clothes on the line throughout the summer they just froze on the line in winter. I taught myself to can . And we bought little chicks and I hand raised them because our brooder broke so I cleared out a space in a spare room and when they got old enough put them In the chicken coup. Fun times and memories with my oldest daughter only 2 when we moved in there.

You are AMAZING!!!!! Truly an inspiration. You have gotten me motivated again. I have raised my kids, homeschooled, gardened, canned, farmed and still do some of it but with a slower, more chore like attitude. After watching your videos the last two weeks, I am trying new recipes again, I started seeds in jugs like you, I made a breakfast casserole last night for today and have applesauce in the crockpot which cooked overnight to can. Thank you for bringing joy back into every day things that have to be done anyway. I watch your videos to start my day every morning with my notebook. LOVE your ideas and recipes. Thank you so much for sharing your life! Your family is precious and you are doing an absolute wonderful job!! God Bless You!

I didn't hear about the challenge at the beginning. Live in NC, and much of our spring garden started producing in July and ended half way in to Aug. In total I did up about canning about 250 jars. Green beans, mixed veggies for stew, catsup, chili sauce, taco sauce, salsa, tomatoes juice, sauce stewed and diced plain and Rotel style, baked beans and honey from our hives.

TRUE about hot peppers in the dehydrator! Years ago, I decided to make habanero powder, thus sliced them up and put them in the dehydrator.... bad, bad, bad move to have it in the kitchen!!! The good thing was that by the time we could go back inside, there wasn't a bug alive!

I loved watching your video and you have a great amount of storage!! I just want to suggest you put something across each shelf so that if there is an earthquake/tremor your jars will not end up on the floor! You could just screw a thin piece of timber across each shelf and the ends!! You will still be able to see your jars! I live in New Zealand and we have had 2 big earthquakes and a friends whole pantry ended up on the floor smashed! They lost all their storage! Great job !!!

Excellent! looking forward to seeing how you use the preserved food! thank you for sharing with us! May God bless you and your family! Only thing I would do different is not using raw local honey in any thing that you bring to a boil like jelly or jam as that is killing the goodness in it. At least that is what I have been taught and I have been beekeeping for about 10 years now and do not heat it up even going to adding it to tea once it has cooled down a bit. I have learned so much from you and really enjoyed your homesteading math! I just knew it was saving us money but have never had the time to do the figuring. :) I learned about your challenge through your friend Sarah of Living Traditions. Any recommendation from her is high praise indeed and I have found your content worthy of her praise. Havelock Ontario Canada

This inspired me to restart my canning. I struggled this past year with everything that is going on and have just been freezer stashing what I can. Since starting to watch this 3 weeks ago I have been find the motivation to get something done each day. I’ve roughly worked through an entire counter’s worth of tomatoes. With spiced tomato soup in the crockpot cooking down. Thank you for showing all the small steps, harvest season can be so daunting to get canned.

I'm enjoying this so much and learning a lot..I hope you can get rid of the voles. I live in the city and haven't seen them yet that I know of. We did have rats Ugh!! saw one on my porch this summer as I was bringing in groceries had left a bag with a bag of pasta on my rocking chair went to pick up the bag and out he popped I don't know who was more scared him or me. With having a big green bean garden this year I think it attracted them and not as many feral cats around. Lesson learned though don't leave any food on the porch not even for a minute. Anna In Ohio

Years ago, a farmer's wife friend of mine encircled their large garden with 5ft of 1/4" hardware cloth about 3 feet deep. That stopped ground hogs, voles, moles and mice. Rabbits & deer were kept out when her husband put up another layer of 1/2 inch hardware cloth above ground.

I did not rad all the comments but I have a tip for the moles/voles. We live in NH and have tried all the tricks, best advice was wrigglers gum. Buy a yellow pack of gum and break a half piece in the holes. The varmints do not like the gum or I guess if they eat it they get sick and go somewhere else. Worth a try next season

I enjoyed watching your project. I used to try and fill my water bath canner to maximize every canning session, because it took so much water and time to boil all that water. When steam canners were tested as safe, I bought one and haven't looked back. I gave away my water bath canner. I can easily do small batches of canning with the steam canner, no need to worry about filling it up with canning jars. It uses so little water compared to water bath canning, so that it heats up fast, and is easy to lift. Since you do so many small batches I think you might find it handy!

I love all of your videos, but these kind of videos from these last few weeks have been SUCH a blessing!!! I've had it on my heart to start canning for the last TWO YEARS but have been too afraid to actually do it. I know that sounds silly, but it's true. Watching how you do it has helped push me forward and I'm going to start this weekend. Aside from that tho, I love all the other ways you've shown to preserve food. I always thought it needed to be a huge process with huge amounts of food and huge yields, but you've shown me that TRULY, every little bit counts! So THANK YOU, from the bottom of my heart! God bless!
