I understand Gracie’s struggles. I’m the only one in my family who is left handed. In school I was forced to use right handed scissors. My husband blessed me with a left handed rifle 5 years ago, boy that struggle to adapt to that took me a while 😂 Instead of yarn or rubber bands I take a band and screw on over top of coffee filter. Works very nice.

Jessica I LOVE this video! Love seeing all the different things you do to give me ideas over my normal canning and preserving. I am currently doing my 6th roaster full of pasta sauce. I do a rotating canning schedule each year so I don’t have to do same things every year. Last year I canned salsa with the tomatoes enough for 2 years about 120 quarts/pints. So this year I doing sauce which includes spaghetti sauce and pizza sauce for 2 years. I always try adding something new and this year I added the peach preserves, jam and syrup. I didn’t have it in me to do the vinegar yet but I promise I will soon! Thank you again! I live in PA so we have the same climate so we are doing things the same time. I did do the august preserving challenge as well, except for the week hubby and I went away for our anniversary 💜. Keep up the amazing videos and don’t be afraid to make them longer 😂

My lazy way of rendering is to put it in whole and then when it's softened use an immersion blender to blitz it. I will also add salt to my water and stir it all around because I think the salt helps pull impurities from the fat. For super pure tallow/lard I will put the whole thing outside (if cold enough) or in the fridge to harden. Then take the fat puck off the water and scrape the meat mash off the bottom and re-render with fresh salty water. I'll do that up to 3 times depending on if I need my crockpot or not. I do that for cosmetic lard for sure to get all those solids out.

My mother would our the rendered fat into a large deep “army” pan which she would set outside to cool overnight (wouldn’t fit in fridge). This was normally done in autumn/winter. In the morning she would cut it into blocks about probably 1-2 pounds ea then she would wrap with butcher paper and store in the freezer. Was wondering if the spiralized noodles could be dehydrated in “nests” and then used in winter instead of pasta. It seems that it would be great for portion control if it didn’t disintegrated on the rehydrating/cooking. Just a thought.

I canned shredded zucchini this year for the first time. Saw it on that old hippie homestead. Also did some jars of shredded carrots that she showed too. Got a bunch more zucchini to do today. And more ripening tomatoes. Think I will do the salsa she did on this video. I have my tomatoes, onions, peppers. Will leave out the garlic. As I'm allergic to it. And will use my fresh parsley instead of cilantro. As it tastes like soap to me. And have a bunch of pears left to deal with. Going to do more sauce. And I think I will do some pear butter. Going to try watermelon jelly. As we have a bunch of watermelons out in the garden. And they are big! Yesterday we cut up one that weighed 28 pounds. Our biggest was 32 pounds. And we live on the southern oregon coast and never thought we could grow watermelons or cantaloupe. But this year they did excellent! Secret is grow them on black plastic!
