I like playing GS/SnS for solo content and pvp but I don’t like tanking dungeons so how do you get around that? Level a 3rd weapon?

Wouldn't do that as you'll be hungry for books and resources. Just accept your role as a tank that comes with your choice of weapons.

I’ve been just been dosing with it in dungeons. I’ve only tanked a few dungeons with it.

If you go to the guild hall, and talk to the guild merchant. At the bottom left is a chest you can buy for very little guild points that lets you select any blue weapons in the game. You can even use them in the codex to convert into purple epics.
