我每次做煮10分钟五花肉，喼多D密D窿，然后放鸡粉，13香，盐，五香粉，沙姜粉，酒，胡椒粉，蚝油，搅拌均匀，然后擦均勻啲腌料，在擦三次白醋，放雪柜一晚，第二天用一个蛋白加D盐，搅拌均匀，擦猪皮上面，烤30分钟，然后拿掉猪皮上面的蛋白盐，放在烤架上烤多15分钟，这样烤出来的猪皮有D咸香味。我每次买3斤五花肉做烧肉。

又是我上次追了烧鸭回复7次，只是这个都是失败不脆皮，四次做过失败，是不是排骨炉挂炉温度不同家里平放炉烧出不一样吗，挂上肉盐我只能图上一点，没有你平放这多.未找到原因，比烧鸭难多了，请指教

我平常都用家用焗爐的，所以只有這方面的經驗，主要成功的關鍵是豬皮要乾硬，放一層鹽在上面去燒第一次，令豬皮首次受熱，然後第二次加熱就令豬皮爆皮！溫度是一定要留意，祝你成功👍

师傅 烤肉时猪皮会起打泡是什么原因 请指教

從前師傅教落，豬皮要香脆，一定要打孔，而且要由皮打至肥肉的部份，烤肉的時候皮下油脂才可以釋出到表皮，再利用這些豬油去令豬皮溫度升高，到時豬皮就會打泡，有氣泡就會脆，所以一定要盡量打多一點孔。有時快要烤完的時候，有一小面積豬皮沒有起泡，還可以再打一次孔，都可以作為最後補救一下！

芥末粉需要發酵處理，過程繁複，而且保鮮期很短，現在很少人會自己做芥末了，現成在超市買比較方便！
