A really yummy fall soup, especially if you happen to have carrots in your garden right now!
Carrot Soup:
1 T. coconut oil
2 onions
4 leeks
2 cups garlic
2 cups bone broth
10 cups carrots
1 can coconut milk (or two cups of any milk you like)
4 t. salt
1 T. pepper
2 T. turmeric
1 t. cumin
chunk of fresh ginger root
Simmer till everything is soft. Enjoy!

If you are new to my channel and Fy Nyth (Welsh for "My Nest") in general, welcome! I'm Ariel. I live off grid (as in no physical connection to public utilities) in a tiny house on wheels in the mountains of western Wyoming. I've been living this lifestyle for nearly four years now and love it! What will you find if you follow my channel and watch my videos?
Real life here. I try to show the good and the bad. The ups and the downs. What works, and what doesn't. The parts I love (most of it!), and the things that suck. Not just the showroom version of a tiny house, but everyday life in a tiny house. Not just the romantic idea of "homesteading" or off grid life, but the everyday details of this lifestyle. I split my own wood for heat, carry my water by hand, and attempt to grow as much of my own food as I can between the weather and wildlife here. I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.
I live in a somewhat harsh and cold climate, but enjoy the stunning sceanery and wildlife that I am surrounded by on a daily basis. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

I cook the same way. I read a bunch of different recipies, compare what they have in common and what their differences are, then I head to the kitchen and just "wing it" based on what I remembered from my research. I do fire up Microsoft Word first however, and type in the composite recipe from my research, and then add notes to it as I create, of my alterations, how it turned out, and suggestions to try differently next time, etc., and after I've cooked it a few times, I come up with a final version that I like, that is now my own custom version.

Me too! I put garlic in my scrambled eggs AND on the toast. I got a pack of Cosmic Purple carrot seeds from Baker Creek to grow next year...can't wait! The soup looks AWESOME!

I need to try this! I love to make chicken curry and double or triple the sauce and basically make a soup. So good!

This recipe is so similar to my curry sauce. I use curry where you use cumin. I made a soup tonight using a combo of your recipe and mine. I had a bag of carrots but not enough so added potatoes and white beans and a jar of chicken I had canned. It was delicious!

I love carrot soup and yours looks delicious. I'll try it. I find that if I order my meat from a place that treats the animals well when they're alive, the meat is good and it tastes great. When I shop in the supermarket, I shop the outside aisles. I stay away from processed food. Ok, that's MY health care. Thanks for the good soup!

Same here!! I love garlic and onions. When cooking with garlic i can't resist eating a small raw clove, quite powerful but I like it!! I have never had carrot soup so some day this will be another recipe to try. I think I have already said this but again you look nice with your hair up.

Hi again! I went to make this immediately and it is sooo delicious! I knew I would though but never thought to use leeks. A great way to start the fall season especially being orange in color. I also enjoy lots of onions and garlic as you do. We surely benefit now when things slow down a bit for you to see and try all your great recipes. Thanks as always and I'm off to have another bowl!!

Greeting from Wisconsin. Your soup recipe looks wonderful. I am going to cook up a kettle in a couple days. I love all the ingredients and am not afraid of that much garlic. It's a good thing I planted and successfully grew 400 bulbs of garlic, harvesting it all in July. I'll be set for another year. Have you ever tried scraping your ginger root with the side edge of a spoon? You don't cut off as much of the ginger this way, only the brown disappears. I remember trying this for the first time and thinking, WOW this is so much easier than using a knife. Thanks for all your blogs and your lifestyle.

I'm a bit gobsmacked very time I see how much garlic you're using. I love garlic, but alway's have to be careful I don't stink of it when I go to work. The only way I would even dare use that must would be making the soup on the first day of a week vacation. The soup look sooo good.

You can use less for sure. I don't know if it's just that everyone I know eats a lot of garlic so we're all used to it, or if your body adjusts, but I can't say I ever smell it on anyone's body. Hmm....

Mouth watering! Those who have to watch their sodium and saturated fat intake might want to cut the salt down to 1/4 teaspoon, use olive oil, and find an alternative to coconut milk. The palate adjusts to lower sodium intake over the course of time when sodium is reduced in the diet, and because my palate has adjusted I would find the soup far too salty, 10 years ago that would not have been the case, youth can be a very forigiving time of life as far as diet goes. I am going to try this soup!

She's using Real (brand) Salt, which contains all of the naturally occurring minerals along with the sodium. Not only does it mean that most of the "salt" she put in is NOT sodium, it also means that the effect on the body is much different, because those minerals supply the balance that the body needs. You also might want to research "good" fats, as there is growing scientific evidence that they are absolutely necessary, and (in proper proportion, of course) not harmful as has been (for only a period of time) supposed.

Real Salt 1/4 tsp = 530 mg sodium Table Salt 1/4 tsp = 575 mg sodum Source: realsalt.redmond.life/wp-content/uploads/sites/6/2017/05/Real-Salt-Analysis.pdf The 45 mg difference does not make a significant difference in sodium reduced diets. The naturally occuring minerals are a real benefit, and if any salt were to be used, it would be a superior choice. The effect on the body depends on inherited traits, health, age, and a host of other factors. If you can tolerate high levels of sodium, then that is great. My research is up to date, and based on studies published in adjudicated journals, subject to peer review. Saturated fats are not good fats. If you can tolerate high levels of saturated fats and can maintain good long-term health, then that is great. I know of no legitimized research that reccommends saturated fats as a healthy choice, and it would be a particularly bad choice for anyone with arteriosclerosis, or any form of heart disease, which is common as people age.

Or simply enjoy modifying the recipes to suit your tastes which I highly encourage everyone to do. Since making food that is exactly what you want is one of the most amazing things about cooking for yourself!

​@@FyNyth Hmm.... I wonder if you have taken my comment as a commentary on the quality of the food you cook. That is not the case. I was adding a suggestion for those of us who live with real health issues that are mediated by limiting sodium and saturated fats. My suggestion was meant as a helpful addition for people in my situation, so that they too could enjoy the recipe. The articles you provide are good ones, not new to me, but also not relevant to my health issues. I am a person who has always led an active healthy lifestyle, and followed a healthy fresh food diet, but heredity has played a bigger part in my case than it does for most people, and I am not alone in this. There are those of us who have health issues that are no fault of our own, and are not a result of poor lifestyle or dietary choices. I cannot change my mind about sodium intake, or saturated fats, no doctor would recommend it, not even the ones that wrote the articles. I don't think my point came across as intended.

Ariel, I guess that all they other stuff with the carrots make the taste different than just cooked carrots. I like mixing a lot of different eatable things together for a variety. Most taste good but sometimes not so. It would be interesting to see the clock. My father had a mantel clock that is in my sisters house now. She stopped winding the chime part because it was rather loud at the wrong times every half hour.

Ok I will be making this (but from usual carrot as it's so hard to find other colours). I am also a garlic lover too! I put it on almost everything and always more than what those recipe said. I used to made those garlic and olive oil pasta with like 2-3 cloves of garlic according to the recipe and I was like what the hell is this, I can only taste olive oil. I probably use 1.5 garlic head per day if I cook 3 meals. And also that's very news those fast forwarding scene with music!

I made this soup for dinner tonight. And ,like you, I tweaked it a little. I used sage instead of Cumin, bcs I don't like Cumin but love sage. And I used almond milk instead of coconut, anyway it was delicious. Thank you.

Your cooking videos are especially soothing. And inspiring. Did you learn these from your upbringing? Do you recommend a specific book for integrating herbs into cooking for health? Also I think a potato chowder sounds good with all the foods you used in this soup. Thanks!!

Why thank you! Well I did learn to cook growing up and my parents (who are both great cooks, just way too busy with work, raising children, and being pregnant to have time for much of it, hence my learning) taught me a lot and cooked quite a variety of foods. But now I just experiment with lots of things and rarely make the same thing the same way twice. I'm not sure I do know of a good book just on herbs in food, healing, and cooking that I've read. There probably is one out there, but I think I've learned bits and pieces from a lot of sources over time. Sorry I'm not more help with that. I do enjoy potato chowder. And I've got a yummy salmon chowder I like too!

Sometimes I would put fresh butter or chicken broth inside to keep the garlic less. I love garlic and onions yummy

Yummy soup. Herbs always good with everything. If I have leftover soup I like to use that in vegetable casserole , chicken or turkey baked in the oven for about 20 minutes sprinkled with mozzarella cheese at 350° thank you very much for your video

Love your cooking style. While watching this I was chopping up a giant zucchini for ginger jam, a great thing to give to friends at Christmas. I live in an apartment but gardening friends give me their overflow so like you, I have plenty of cooking and canning at this time of year. Late summer and early Fall are delicious seasons.

Purple carrot soup might be attractive, but I would fear a grey sludgy color if mixed with the others . Tasty but don’t look at it while eating😁

I actually made and canned a bunch of purple carrot soup after this batch. Because I had more than ten gallons of carrots when I pulled the remaining ones even after eating lots this summer, giving some away, the gophers eating a bunch, etc. I've never seen such a record carrot year! Anyway, I made a pretty similar soup but with some wild apples and skipped the turmeric. It does look like a pretty purple color!

I had not been using many onions or garlic for the last ten years as the cat person that lived with me liked to eat whatever i was eating and i heard that they were poisonous for cats. But he has been gone for a year now and i am learning to make changes in my routines like enjoying lots of onions and garlic. Your encouragement on these issues is creative. I like the carrot soup concept.

That looks soooo good! The garlic reminds me of a time when I was making spaghetti sauce with a friend there, and adding powdered garlic. I probably added at least several tablespoons to a pot, and my very polite friend didn't quite know what to do. She said, "Umm, I'm thinking that you must know what you're doing?" She did eat the spaghetti, but I don't know if it was a struggle for her...LOL!

I ate this all over the course of a few days (and had some friends for dinner), but you certainly could freeze it. I made a bigger batch a few days later and canned a bunch since my carrots were so crazy productive this year that even after eating lots and lots, I still had 10 gallons when I pulled the remaining ones!

Looks lovely, might give this one a try. Can you give me some off the top tips for growing carrots? I'm working on a project for auto watering etc and controlling the temperature of a greenhouse next year. So far each year I manage to bake whatever I try and grow :(

I don't know that I have any great tips. I just scatter seeds, water, wait, and hope the little rodents don't eat them all. I think they do generally like the cool weather I have here. This year was the best carrot harvest I've ever had though an I'm not totally sure why.

🤔 all these years, and i've never cooked with leeks. probably partly because i never see them at the market 😅i'll have to look for them one of these days. 😂 you might love garlic even more than i do.

I am from India and so being quite familiar with usage of spices likes turmeric powder I would like to suggest you that please don't use of this much of turmeric powder for this amount of soup....one teaspoon of turmeric powder would have been sufficient for this amount of soup... turmeric powder is very good for your body but avoid over using it at a time or else it night affect your health. Isnt it even heathier to eat the vegetables raw. Cooking takes out some of the nutrition.

In some things yes. And cooking helps some parts become more digestible in a lot of plants. So I try to eat lots of both raw and cooked

Ariel, I have never heard of carrot soup, but, why not? I'll give it a try. Sounds and looks good. I hadn't had potato soup until I was in my 20s. We just didn't have that. Mostly, we had casseroles. Although, we did have tomato soup. Just depends on how and where you grow up, I guess. You are absolutely spot on when you speak of eating healthily! I am learning from your videos how to make tasty, healthy food. I am just curious. Do you ever eat out and if so, what do you recommend to eat?

I hope you liked it! I do occasionally eat out, usually only if that's where someone wants to meet for something. Most of the time I do much prefer cooking at home. My personal favorite is Thai places when I do eat out. Generally lots of veggies that aren't cooked to death, and almost nothing with wheat, corn, or dairy. Plus everything tastes amazing!

Did you peel the carrots? Could you can this soup? I am looking up the growing season for carrots in my area right now.

I leave peels on when I have nice fresh home grown carrots. They are thin and sweet. If I have older grocery store carrots, I do often peel them. You can go either route. Yes this soup could be canned. Most would recommend pressure canning for a good tight seal.

Ariel so beautiful and the soup looks good also, but sweetheart you have to stop it I'm going to get fat trying all your recipes, you know I love the long dress😍. Now I don't usually like a women with their up and pinned down. But you look marvelous it must be the red hair, my favorite color! I'm not sure I've ever seen anyone who could really get fat eating massive amounts of fresh carrots, onions, and garlic.... :) That's just what I do with my hair when it's all soaking wet from washing.

Yes dying slowly, it is what killed Aretha Franklin, Steve Jobs and Patrick Swayze. But so far I'm kicking it's ass, I hope to live past 10 years but you never know, most don't. M.K.

I've not needed to move it in a while, but I would rent or borrow a truck if I need to move. My van doesn't have enough power to tow my house.

that looked mouth-watering, here's another delicious Eastern recipe for abundant carrots: en.wikipedia.org/wiki/Gajar_ka_halwa (Indian for "confection/dessert of carrots") I like it with sultanas (golden raisins) stewed in with the veggies also. another kind of halva is better known in the US, made from ground sesame seeds and honey, available in blocks in ethnic delis kinda like nut nougat in European delis. Yum! p.s. just be careful if anyone has acne or other vitamin A sensitivity, too much carotene can cause a break out!
