I miss visiting you on KZbin, so occasionally I rewatch some of your videos. I'm going to be selling my house this year, would love to live in a tiny home, but there just isn't enough room in them for me. I have seen pictures of two mini homes put together, usually in a "L" shape. I might try that, with a wooden deck in front, a small greenhouse on part of the deck. I love cooler areas to live, can't tolerate high heat. I'm disabled and too old to shovel snow, so trying to figure out where to live. I'm very impressed with your strength and stamina, admire you for your accomplishments, thankful for your willingness to teach others.

I just got up and got a piece of my wife's corn bread with real butter of course. And your right, i love soups when its winter time. The smell of a pot of soup on the stove when i come in from a days work outside when its cold is such a wonderful feeling it is such a comfort food. It makes the bear in me extra sleepy during the hibernation season.

It is also a good idea to use salt that has iodine in it. As the iodine moderates thyroid gland, brain functions for a fetus during pregnancy and bone growth issues. Helps with removing toxins from your body etc. Recipe looks great thanks for posting it. Keep up the wonderful videos.

I'm sure you already may know it, but a cast iron skillet is perfect for baking cornbread in. It's also great for the cast iron seasoning. I screwed up once and made the batter too thin (with no extra flour to thicken back up) so I made cornbread griddle cakes. A big hit with the family and worked great with the venison stew I made. For years after that's how I had to make it so my kids would eat cornbread.

Thank you for doing this. I feel like a guest in your home. Not many show their living. I wish I could figure out how to do it on disability without creating debt, but I don't know how to use a firearm, can't lift much weight & can barely use a saw. Ya gotta do a lot of DIY to save $. I really admire you. I'd like to be in VT mountains. If I can, I will. Just need to succeed investing.

Hi! I always made my cornmeal the way you do, but about a year ago I saw a friend make it with a lot more liquid. She used more than a cup of milk, maybe even 2 cups! I was shocked, but being polite, I just watched. She let the cornmeal sit in the liquid after stirring it in well, then when putting it in the oven, she stirred it again. It's amazing how delicious cornbread is this way!

Hi Ariel, since you mentioned the difficulty of digesting corn, you might try making some cornbread with masa harina which is flour made from corn that has been nixtimalized. This process increases the nutrients in corn and makes it easier to digest.

When using coconut flour in a recipe reduce the amount by 75 percent. It absorbs a lot of moisture and expands. If a recipe calls for 1 cup of all purpose flour you only need 1/4 cup of coconut flour. Otherwise the product is very dense and dry.

@FyNyth 5 жыл бұрын
Interesting. I've not found there to be much of a difference that I've noticed in my cooking.
@SherryEllesson
@SherryEllesson 4 жыл бұрын
@@FyNyth Hi Ariel - seeing you in September 2020 - I can't speak for 75% reduction, but I know I've typically cut my coconut flour by 1/2 or more in most recipes. I can use Almond flour straight across, but for Coconut, I definitely had to increase the liquid by a lot. Maybe the difference in your altitude is part of the difference. If it keeps raining here in Delaware (Sept 9, 2020) I may have to adjust for below-sea-level baking.

I would have to whip the cornbread ingredients so that it bakes light and fluffy. I have never make cornbread, but maybe I will try it minus the eggs and agave or syrup instead of honey.
@FyNyth
@FyNyth 7 жыл бұрын
I think it would be fine without the eggs, but you have to add a little more of some other liquid. I don't know if you do dairy, but yogurt works well as a substitute for eggs. Or if you don't mind it being a little more sweet, applesauce can be substituted as well.

As you use a 9"X13" pan and you always look to be in great shape and slim , now that's a lot of food for one person.. But i 'am just myself except for my jack russell terrier who likes corn bread too but i have enough for a week.. I find it's easier to use a pan the size you use.... I could make smaller batches i guess.. Maybe not so difficult for one person but each day i have to work at making the right amount of food .. lol

Yep, most of the cornbread gets eaten with turnip greens, mustard greens and collards down here. A big bowl of turnips and roots with a dash of pink salt and a spoon of bacon drippings (39 calories per teaspoon!) can't be beat. I just watched your mint tea video, so now I have to go to the seed store and plant some when it's time...I could almost smell it! Take care.
@FyNyth
@FyNyth 7 жыл бұрын
Mint is so easy to grow. If you can find anyone with a plant or even buy some fresh mint at a grocery store, you can root it very easily in water. Just a little quicker than starting from seed.

Well it was a long process. I had eczema since my first (and therefore only, none of my other siblings, all younger, ever got shots) set of vaccinations. And it's something I've looked into my whole life. When I was young, my skin was so itch my parents had to keep mitts on my hand when I slept to prevent me scratching till I bleed in my sleep. Several things over the years helped improve my skin, but nothing ever seemed to fix it. Then one day I was reading something (I love reading everything I can about food/nutrition/health) where someone mentioned that they had eczema as well and when they quit eating wheat, it all went away. So I thought, what is there to loose? I'll just try cutting out wheat for a month and see what happens. And my skin cleared up! I also suddenly no longer had a runny nose/congestion constantly which I had just thought was normal. And I could smell things I'd never been able to, probably due to less congestion. It was an amazing difference! I doubt that wheat is the root problem, it might be more of an intolerance of glyphosate and the way commercial crops are raised. I don't know. I just know I feel better avoiding it. And it that whole experience has motivated me to learn even more about food and how it affects my health, the gut and how it's health affects everything else in my body, etc. I'm no doctor, I just find all of that fascinating.

I wish I had been given Ariels education. I've never used algebra or geometry and many other useless things my Scottish school education gave me. Thank goodness for my Granny who taught me along the same lines as Ariels parents... useful life skills xxx

I cook without gluten and dairy, and if you'd like a substitute for dairy butter, try these! I use the soy-free version, and it's fabulous! earthbalancenatural.com/product/original-buttery-spread/

Thanks! Butter and fats have never seemed to bother me, just the rest of the dairy. I know there are different proteins in different pats of milk and people can react to various of those.

I've never had corn bread. Not something we have in Scotland. We don't get all the varieties of flour that you do Ariel. I've never seen corn meal or coconut flour. Wheat flour in all the shops, we've only recently got bread flour and cake flour all made with wheat. Before that it was plain or self raising... take it or leave it.

If you have access to a grain mill, or even a good blender (for most grains softer than corn, which is pretty much the hardest of them all) you can make your own fresh flours from almost any grain!

Baking powder or baking soda, Ariel?! *panic* No, I don't cook enough to know.
@FyNyth
@FyNyth 7 жыл бұрын
Baking powder. If you don't have any, you can make it with 1/4 t. baking soda mixed with 1/2 t. cream of tartar = 1 t. baking soda.

Please, Ariel--change your recipe above to read baking powder rather than baking soda? Thank you for including the recipe in the description! (If you are able?)

Fresh ground corn meal..... oh my, you put me to shame. I just made chili and cornbread a few days ago and I'm ashamed to tell you how I made my cornbread....lol. I used jiffy cornbread muffin mix, cream corn, eggs - a quick way, but definitely not as wonderful as your cornbread probably is.

Hey at least you are involved in cooking what you consume! I'm sure it was still better than what you could find commercially made. But it's not much harder to just make it the whole way from scratch! ;)
