A first try on sharing a cooking video with you all. I plan to keep experimenting with what works and improving the quality if people enjoy this and create a whole Tiny House Cooking series along with my Nature and Fy Nyth series of videos. All comments and feedback welcome. But most of all, just go cook something for yourself or a friend!
Approximately what I put in this batch of chili:
2 pounds ground meat (elk, beef, etc)
1 large onion
2 cups diced garlic
2 sixteen oz. cans of tomatos (diced, crushed, or juice)
5 T. chili poweder
2 T. oregano
2 T. basil
1 cinnamon stick
12 whole cloves
1/4 c. honey
2 t. salt
1 t. pepper
3 sixteen oz. cans of beans (kidney, pinto, black, great northern, etc)

If you are new to my channel and Fy Nyth in general, welcome! I'm Ariel. I live off grid (as in no physical connection to public utilities) in a tiny house on wheels in the mountains of western Wyoming. I've been living this lifestyle for the past three years now and love it! What will you find if you follow my channel and watch my videos?
Real life here. I try to show the good and the bad. The ups and the downs. What works, and what doesn't. The parts I love (most of it!), and the things that suck. Not just the showroom version of a tiny house, but everyday life in a tiny house. Not just the romantic idea of "homesteading" or off grid life, but the everyday details of this lifestyle. I split my own wood for heat, carry my water by hand, and attempt to grow as much of my own food as I can between the weather and wildlife here. I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.
I live in a somewhat harsh and cold climate, but enjoy the stunning sceanery and wildlife that I am surrounded by on a daily basis. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

Just a thought on the cans. My parents give me an unbelievable amount of used coffee grounds in steel cans for my compost pile, which I greatly appreciate. We do have recycling in our area, and I have recycled the cans, but I also use them quite often in the garden. I just drill or punch drainage holes in the bottom, and they are perfect for planting flowers, veggies, etc. I have even used the small cans, like ones you threw away, and just planted pretty flowers to attract the bees. If the rusted look bothers you, rustoleum makes some great colors that can be painted on the outside. You probably are aware of all this, but I just thought I would mention it. Also, I have started making all my beans from dried to get away from the whole can issue-it is cheaper this way too. For convenience I whip up a big batch of whatever kind, use what I need and portion out the rest in containers for the freezer and future use. I know some people can the leftovers, which is super easy. It took me ages to break down and start using dried beans, but when I realized how much cheaper it was I was sold!

I like dried beans, but unless I use a pressure cooker, it's really hard to get them cooked soft at my elevation since water boils at only 199 degrees F. versus 212 at sea level.

Fy Nyth Oh my goodness-I did not know this! I mean, I have seen instructions on the back of packages and in cookbooks for higher elevations, but since it doesn't apply to me I never really thought about it. Thank you for replying-that was interesting.

Ariel, to compensate for the elevation, try putting your dry beans in lightly salted water the night before you are going to really be cooking, and bring them just to a boil. Cover and let soak. Start over the next day using the cooking procedures you regularly use, you'll have a head start. Dry beans are very much cheaper than canned, even often free by the bucket around the other edge of your state or the panhandle of Nebraska, if you know a few farmers. I'd just bring you a five gallon bucket the next time I do a job over there, if you weren't moving off. I'm not even a farmer, but I know so many, free beans show up faster than I can ever use them. I just mix them all up when I get them dry, I like the colors too. I get reds, blacks, great northern's, kidneys, and pintos. I like garbonzos too, but don't know where they come from, cans I guess, I don't much care for hominy, but like a little in chili (kind of a corn tortilla hint). I'll try some honey in mine if you try some hominy in your's. p.s. I think there are bean farms around Driggs too, if you get over the pass occasionally.

Thank you for sharing your tips and cooking videos. I have never tasted elk. We use venison in our chili. I enjoy your tiny house and your upbeat positive outlook! What a beautiful area you live in! We visited there (Yellowstone, Wyoming, and Montana) a year ago - how amazing to experience the west by an east coast dweller! Love your garden, also. Sending my best to you! Thanks again!

Thank you! Venison would be just fine too. I just happen to have access to elk and prefer the taste to venison myself.

You make fantastic videos keep up the good work there are a lot of people that need to learn how to cook as good as you if that is possible you are a magnificent cook and from what I see of you on your videos you are a magnificent lady and I like the way you have your tiny house set up everything is so user-friendly and convenient you have done a magnificent job with everything that I have seen

This is the best chili I’ve ever had! The honey, cinnamon and cloves smooth out the acidity of the tomatoes and add a wonderful flavor. Even better the next day and in the middle of the night! Also made the cornbread which was delicious too and loved the all in one pan idea. I used almond flour along with the corn meal. So good! Thanks for the great video!

Here in Texas we argue a lot over chili. Some folk believe there shouldn't be beans in chili. I'm a VERY strong proponent of beans in my chili. Multiple varieties if possible. I haven't considered honey in my chili before but I'm not averse to the idea of sweet and sour ingredients so I'll need to give that a try next time. I also don't have a recipe per se. Actually nowadays I just take a can of pre made chili and spice it to taste then call that done. In my youth however, the recipe was whatever we had in the house that we could fit in the pot!

Honey, cinnamon and cloves in chili.... Only because it's you, Ariel. I will try this. But I'm not making any guarantees as to whether or not I'll eat it! lol! (I will eat almost anything cuz I hate waste... but if I must have dessert mushed with my supper I will! ;))

There's meat sauce where I'm from that everyone makes a version of that has cinnamon in it. Minus the smoke flavor think of the savory sweetness of a BBQ sauce. I like it but we do it all the time around here.

Really like how well you make such good use of your kitchen space. My kitchen is not large at all but I realize I could do a lot better with less floor space and deeper cupboards like you have. Love how you have organized things. That chili looks so good, think that’s what I’ll make tonight and try out new ideas of honey, cinnamon, cloves and lotsa garlic and bay leaves. Hope you had time to make the corn bread !

Your presentation is just fine. The point is the confidence you are teaching. Confidence in general ways and themes is what you have learned in years of cooking. If this was software, we'd be talking about patterns. Start with good fats, add aromatics, and you have a base for almost anything. Good start to this series. Keep going.

I'm making venison chili this weekend, not because of this video, rather because it's going to be cold as crap out and I like chili when it's cold. Some people only use beans, some use only meat, and some use both. I'm in the both category. I like to use a blend of different beans for the same reason. I love garlic! Here's a tip to peel as much as you want real quick. - Two mixing bowls of the same size. - Put cloves in one bowl and place the other bowl on top like its a lid. - Hold the bowls together with your hands and shake them, kind of violently, back and forth/up and down for a few seconds. Remove the top bowl and you'll see all of your shelled cloves sitting at the bottom of your bowl. Done. Kind of loud though. Sounds like you're ringing a dinner bell. You're putting them in chili, so you could just smash them with your knife instead. What ever floats your boat.

Oh, I said mixing bowls. It doesn't have to be mixing bowls. I just happen to use the smallest of a stainless steel mixing bowl set I have. I have two small ones. I guess they hold about 5 cups of liquid. It could be any kind of little bowls, plastic, whatever. I just saw that large mixing bowl on that shelf and thought about the tip. The smallest one in that set and another one like it. As much garlic as you want -> few seconds -> done.

I've tried this actually and I think the success may vary depending on the kind of garlic and possibly it's age. With fresh garlic from my garden, it didn't work at all. Simply bruised the cloves a bit and cracked some of the peels. But nothing came off on it's own. With some grocery store garlic, I had partial success, I suspect because the garlic was older and it's peels more dried out. But I don't know for sure.....

+Fy Nyth - Hmm that's interesting. I haven't had tremendous success with my own garlic yet. I buy tons of garlic and stock it up on my counter. It dries out sitting there, so your speculation is probably spot on. I shake it in metal bows and am not at all easy with it when I shake it. I have had some batches that didn't completely pop out of their shell, but they did crack the shell. :)

Another way to peel garlic is I usually smash the clove with the side of a knife and then peel it.

Damn now I'm hungry :o) Never tried Elk we have lots of them out on the West Coast of BC, I've been told its a really lean meat, I can see why you added the bacon grease, the first cooking video is a good start.

have you tried adding a bit of Ground Cumin? It's great in Chili . its my favorite ingrediant in Chili and Mexican food.

So this is what we’re having for diner tomorrow, it was an inspiring recepy with unexpected incredients! Did you ever try starting of with a dried beangstigend (mix)the day before ? Super easy as you already have an nice simmering cast iron pot on the woodstove. Love following your movies about your very much big living life your tiny house, take care,

Nice. I have! I actually have a mixed dry bean soup recipe I really like. Where I live right now though, at over 6000 feet above sea level, water boils at 197 degrees F. not 212 due to the reduced air pressure. And that makes it pretty tough to cook dry beans soft without a pressure cooker. :)

good first video, am excited for the next one. will you think about putting your hair up? when you turned around to your pantry your hair wasn't very far from the pot. sorry my mother was a fanatic about long hair down while cooking.

I have only cooked with whole cloves when they have been put in a ham prior to cooking. They give an absolutely amazing flavor to the meat! But I they are not meant to be eaten whole afterwards. How do you handle the whole cloves in your chili after it is cooked? Do you have to go through and pick them out one by one, like you do with the bay leaves? I know they won't cut up your gut if swallowed like a bay leaf can, but the flavor is so strong I would think it would be unpleasant to chew one of them up. BTW-your chili seems a lot like Cincinnati chili-they eat a sweet, cinnamon based chili that is served over spaghetti. I used to make it often for my husband when we were first married-he said it reminded him a lot of a dish his grandmother used to make in his native Mexico.

Yes you can eat the whole cloves, but they are pretty strong. If I encounter one while eating, I usually just put it to the side. But there is no reason you can't just eat them if you would like.

Yum...although I'm sure my tail feathers would be blistered afterwards...oh my 8-) I have fights with garlic..I wish we could have seen your what you thought was a "boring" technique. Next time maybe you can show us your process for garlic please. And it manages to get everywhere and on everything...wish it wasn't so darn yummy

Your Chili sounds delicious . Is cooking on a propane stove much different then natural gas stove?

Thanks! I've never cooked on natural gas, but I would think they would be similar. I do know I much prefer propane to electric for a stove.

Howdy Madam, Just came across your interesting chili cooking video and love the much garlic and onions you use! (Also LOVE chili) Was wondering about the cloves and cinnamon sticks that are included, do you just leave them in the chili? Thanks and God Bless! Phil South Carolina

You are welcome! I usually leave everything in the chili, but do pull the cinnamon sticks, cloves, and bay leaves out when I encounter them while eating. :)

I'd like to make some helpful suggestions: It would be helpful to show us the amount of each ingredient in relation to the palm of your hand. Your cup size sounds very small and your tablespoons may actually be teaspoons judging from the amount of chili powder you have used. Seeing the spoon we can't judge the size on a video but food in your hand is perhaps easier. Different countries have various sizes, all called tablespoon. In the UK 5mls is a teaspoon 10mls a desert spoon and 15ml is a tablespoon. 8 fluid ounces is a generous teacup or small mug - which is why I question 4 1/2 cups garlic! lol you won't have problems with vampires (excuse my humour). I too cook intuitively but try to have an idea of the proportions - which would help new people. I hope this doesn't sound critical as that is certainly not how it's meant. I'm a big fan of yours and I want to encourage you so newbies in the kitchen will give it a try too. We couldn't smell it but it sounded wonderful, I'm sure your friend enjoyed it. Just a suggestion - but some sort of mirror above you, temporarily, while you are cooking might work so we can see what you are doing.

The juice in the bean cans is actually the preservative chemicals and other similar chemicals, I get rid of them.

I guess that depends on what kind you buy and is probably true in some case. I only buy organic ones that are just beans, water, and salt.

To Recycle the Tin Cans you could put them in a Sealed Drum filled with Water Eventually they would Rust away

You like garlic fresh but don't have a press? Almost no effort involved: crush the garlic under a flat knife blade to break the peel loose, put the mangled clove in the press, and squeeze. Takes like ten seconds. How do you preserve an entire elk living in such a tiny place?

I do have a garlic press, I've just never got in the habit of making use of it. For meat storage I share a chest freezer with a neighbor.

You need a tripod with side arm (it gives you much more options for the range and angle of your visible area); if you have a tripod,just get a side arm,mount it on,then your camera and you can position it by your stove and angle it to the counter so people can see what you're doing. The other option would be to secure the tripod between your cooker hood and the shelves with your jars and position it sturdily so it don't fall, but with the lenses pointing down between the sink and the hob(there's much cheap equipment options for such photography setups). You are good teacher,but in food photography and tutorials and etc. you should focus on the food and what you're doing with it,so consider these ideas.

Nice. I already have and used a similar one to that. I did just order a smaller clamp on version that I hope to be able to use with my second smaller camera for a top down view as well.

the salt that you use where can you find it? I live in Lancaster Pa. I know that there is sea salt, regular salt. I'm looking for healthy ingredients to use when cooking. thanks

Here almost ever grocery store carries it, but here's an amazon link to the one I usually buy. www.amazon.com/16-Ounce-Real-Salt-Coarse-Pouch/dp/B001CM8RZU/ref=sr_1_3_s_it?s=grocery&ie=UTF8&qid=1490839287&sr=1-3&keywords=real+salt. But any kind of salt that is unrefined and looks "dirty" will have many more minerals, varying based on where the salt was sourced, than a refined and pure white looking salt.

I love sea food, but living so far from the ocean, good fresh stuff is a little hard to come by. I do love when I get to eat some of our local trout!

There is almost no recycling in the area where I live because it's so far from any kind of plant that can do something with it. There is a recycling center, but almost everything taken there gets put in the landfill sadly.

I do pressure can some things. Do you mean as a cooking method or as a way to store things long term? I mostly use a pressure canner when preserving a meat product like broth that needs a tighter seal than a steam bath canner can provide.

I've never heard of cinnamon, cloves and honey in chili....sounds different, but good....Can you actually taste the cinnamon and cloves?

I'd say they are kind of a background flavor. I never think "Oh, cinnamon and cloves!" when I take a bite, but they mix nicely in with everything else to make a rich warm flavor.

Ariel, looks really good but you didn't wash your hands - just gave them a tiny rinse and wiped them on the dishtowel. You did the same in the roast turkey video - people who don't cook may not know about food hygiene and unsafe practices kill people every year..

Thanks for your concern. I should probably mention there are some differences in how I would handle things when I know every single step of how meat was harvested and handled versus commercially produced products. I can say that in having feed meals to literally thousands of people in my home, I do not know of a single food bourn illness incident.

A very old joke for you April:- A tramp/downnout person calls in begging at the back kitchen door of a big stately manor and the cook answers the back kitchen door to find the tramp begging for food upon which she asks him "Do you like second day chilli" to which the Tramp replies "Oh yes, my goodness I love it" to which the cook replies... "Aye... well... come back tomorrow" The joke was original about second day soup but your making chill n second day chilli is better than "made today chilli" lol xxx I know it's a mean joke but most jokes are usually at the expense of someone else's suffering. I never said it was a "PC" joke or nice... it's just a joke. I'm going to be stoned to death for this now aren't I lol xxxxxxxxxxx
