Simple and easy way of making homemade pickled mustard greens also known in Hakka as hum choy. No need to dry, no need to rub with salt. Just try it and you will know what I mean.
3 pieces of mustard greens
A tub of rice water or plain water
3-4 heaped tbsp salt
2 heaped tbsp of sugar
You can ask any question about the recipe. I will definately answer you asap. Also please leave a comment on your thoughts. Tq.

Great idea but the salt I’ll dissolve those plastic bottles , get a canning weight made out of glass

Yes definitely canning weight is good if you don’t have, need to improvise.

Fantastic video, thank you. How do you make rice water? Is it the water after washing rice? If so, what type of rice, short grain, long grain, or glutinous perhaps?

Thank you for watching. Rice water is water use to rinse rice before you cook. Any type of rice will do. No rice water can use tap water. No problem.

How long does it last in the fridge? Looks so good!

Can keep in the fridge for 2 weeks. In the freezer for longer time as I see some kept in the freezer. But I never try keeping in the freezer n wonder if texture will change.

After harvest when keep in the fridge need put some of the liquid together?

Not necessary. Just put in a container n cover tightly and finish within one week.

After 12 days need to discard brine n store hum choy in fridge or freezer??

Yes When they turn a very nice yellow color, you can store in the fridge but not in the freezer. You can cook with pork or fish or just stir fry finely chopped.

Thank you for reply. Another query pls rice water has to be from washing rice only or as long as it’s rice water eg glutinous rice water can also be used to do brine. Your advice will be appreciated Tks n god bless👍😘

@@patriciasun9992 Yes any rice water will do, be it glutinous rice. No rice water can use tap water. Rice water is just to activate fermentation.

It is traditional to use this type of vegetables. I have never use other vegetables before but i recycle the solution by adding white radish and their leaves. They came out delicious too.

I feel its already a bit sourish but if you want very sour you can try add vinegar.
