Taste is every one's individual choice also practicing a taste from young age. Biriyani : It's a food from persiya brought in to India by Mughal Emperor, actually it's called pulao ( pilaf ) food preparation evolves every time it enters new regions, people try to add available spices and vegetables to it. Biriyani taste as for me is Juicy Mutton and Tasty flavorful Basmati rice, as mentioned earlier when it enters various regions people add available spices And vegetables and make various types of Biriyani. Arcot Nawab brings in Ambhur, Vaniyambadi, thirupathur regions and they used zeera rice. In Lucknow it is Awadhi style Biriyani. Kerala Thalasery khyma Biriyani. Kolkata king Shajid added Potatoes since unable to buy Mutton ( financial crisis). So all these evolved Biriyani are not Authentic Biriyani, Lucknow and Delhi I.e Awadhi and Mughal Biriyani are close to Authentic. I personally like Basmati Biriyani since less irritants and juicy Mutton without any side dishes.
