Love your setup! Killer rig!! I’m 68 yrs old KCBS 1st Place Pork Shoulder aka Boston Butt 2nd Place Pork Ribs. I built my grills and smokers. Having said that makes “Mr Know It All”! Now stay with me here!!! The access door,,,,,,fabricate Stainless Steel griddle! Make it a recessed with a grease hole on the backside. “ Smash Burger USA”!!!!! Great video!

I tried to catch the tube that fell off the saw 😆. Maybe the griddle that you are thinking about making could go over the flame area and also over you open flat top? Very nice build Andrew.

A thought just hit me as you were putting the ribs on. Get down to 70 deg cold smoke some cheese,,,,,fish and I’d be willing to bet some killer jerky! 👊🏻🤟🏻🤙👍

Nice build, i built a smoker a few years back after tossing multiple smokers over the years store bought that would rust out in a few short years. Instead of building it out of steel like you did, i went a little different to get more life out of the build. I did a remote smoker setup also, putting the smoker near the house and firepit out near the wood shed. I ran 4" flex drain pipe because it was stupid cheap to buy to create a pipe structure from the fire pit location to the smoker location in the ground in a small trench i dug. I encased the flex pipe by pouring a concreate base layer, then layed the flex pipe in the ground, then finished it off with concrete encapsulating the flex pipe. This was my smoke pipe from the firepit to the smoker. Then at the exit of the pipe to the smoker, i stacked blocks in a circular configuration that i liked for the smoker, connecting it to the exit of the smoke pipe from the ground. The smoker is domed like a brick fire pizza oven using a off the shelf pizza oven cast iron door i found on amazon. The fire pit side of the setup is near my wood shed, which i have rebuilt a few times over the years to accommodate different ideas so i can smoke down into the 120's, but current configuration is a rocket stove style that feeds the logs from the top, so as the wood burns away the logs slowly fall into the fire, self feeding it with a door to prevent air entry. It has a 45 degree exit for the smoke side attaching to the smoke pipe running under the ground. I don't like to baby sit the smoker while i smoke meats, so i automated it with a actuator attached a steel braided cable ran to the air intake door that naturally wants to close via gravity. I use home assistance with Meater+ thermometers in the meat and arduino to control the actuator adjusting it automatically in 1 minute intervals to target the temperature i set. I have been on the carnivore diet for the last 2 years, so this has been my usual method of cooking my meats, because i can cook a few weeks worth of meat for meals at a time and vacuum seal it in portion sizes and freeze, reheating when needed. Most of my meats i smoke with a target temp of 135, so i can maintain a medium rare cook while getting the smoked flavor, similar to how you would cook sous vide. Before anyone ask, yes i burned off the flex drain pipe with multiple long high heat burn sessions and pouring water down the drain to run out all the burned remains out the other end. The smoke pipe is just concrete now coated with smoke residue.

Great work. You got a great metal shop. Have you ever thought of building things for resale? I’m talking like small 3pt attachments, smoker grills etc? Dethatchers, hitch receivers, tool racks would be some good attachments to consider. Good stuff.

With the flat top on the burner, you can set your wood on top to get it to warm up. That way it can ignite faster and give you clean and consistent smoke

You need to add a second rack on the smoker section lol. You can add a grate above the fire for grilling and use the smoke tube as a griddle….. damn I’m soooo jealous this is so awesome

Ok I’ll leave you alone after this idea. “Open Air Rotisserie” over the fire pit. Have an adjustable bracket on the outside of the grill for 5/8” rotisserie rod. Have an adjustable bracket for the heavy duty 5/8” rotisserie motor. Set it up for a med size hog or several turkeys and chickens! Not saying to purchase it there Smoke Daddy has a heavy duty rotisserie motor!

I did think about it, but this piece will constantly be contaminated by outside environmental elements out of my control and isn't easy to put indoors like a dedicated flat top.

You need a carport or some kind of cover and maybe a concrete floor for all weather conditions. Have not watched all the way through yet but that flat surface between the cooker and firebox would make a great griddle for cooking.

With the flat metal you can season it for cooking on. Pancake eggs sausage. Just about anything

Put grease catch pan under the grate if your doing alot of butts. Don't want that grease making it to the coals and starting a major fire

Do you have a pipe and tube rack? If not, you should build one. I recommend you put the rack on heavy-duty wheels.

instead of the bolts to stop it from tipping out you should have just welded a rail inside? The you could still pull the rack out without tools.

Its main use is for a fire pit, low is needed to see and feel the fire. This is a jack of all trades pit/cooker and master of none.
