So I came across this sentence “de muziek is hier leuk” and it was translated to “the music is nice here” so I’m curious about the word order here. Why not “de muziek hier is leuk” or “de muziek is leuk hier”

All 3 options are possible, but with 'de muziek hier' the 'hier' would be part of the subject.

Yes, it is. However, for 'ik zou graag' you could use 'ich möchte'.
