The Hot Brown is a true Kentucky original, and the recipe for this ultimate in warm, satisfying comfort food is featured on menus across the world. What goes into the making of Kentucky's signature dish? We visit the kitchen of Louisville's Brown Hotel, where this classic originated more than 80 years ago.
Here's the back story of the Hot Brown: In the 1920s the Brown Hotel was the site of popular dinner dances, attended by upwards of a thousand guests each evening. In the early morning hours, after a night of dancing, the guests would head to the hotel's restaurant for a meal. Chef Fred Schmidt set out to create a new dish to tempt their taste buds. He came up with an open-faced turkey sandwich with bacon, tomatoes, and a Mornay sauce, the one and only Hot Brown.
Generations of cooks have taken the original recipe and added their own twist. We meet with Ryan O'Driscoll, Chef de Cuisine at the Brown Hotel's English Grill restaurant, who whips up his take on the dish for us.

I live in Kentucky and it's almost impossible to find a properly-made Kentucky Hot Brown unless I can find the time to go all the way to Louisville. That's a shame.

I had one of these little marvels at the hotel. 27 bucks, plus the cost of a six-whiskey flight. But it was gourmet, and I was gorged and replete after that awesome lunch.

Really nothing like the original from the hotel....even around Kentucky. I travel around the state of Kentucky, for work, and have eaten The Hot Brown at many different restaurants...some pretty good and some not so much LOL!, but I have yet to try one anywhere that compares to the one served at the hotel in Louisville. I make it a point to take visitors from out of town to the hotel for a Hot Brown to experience a true taste of Kentucky. Keep up the good work and we look forward to visiting you guys soon when this pandemic lockdown is behind us :)

How in the world could you use turkey for the “World Famous Hot-Brown”, it looks to me it should be made out of “Country Fried Ham Meat”. Now b’gawd that’s Kentuckian !!!!

Yes, the Brown Hotel invented the "Kentucky Hot Brown", and all, but that's not like any "Kentucky Hot Brown" I've ever had... tell ya what, chef-- you don't try to reinvent and gussy up the classic Hot Brown, and I won't tell you how to put shrimp on t he Barbie-- M'kay? M'KAY!! :)

That was not a hot brown! Former Brown Hotel chef Joe Castro made the best hot brown in my opinion.
