Eey!! It's Monday, and it's another culinary adventure. The food, place, and chef are great. I love the chef's background story and how the restaurant came to be. so I looked up Ueda beef and Shinya Ueda is an award winning rancher of Tajima Gyu, holy smokes that is REALLY rare treat stuff indeed. The guy is quite skilled at taking the entire process to extreme quality levels.
