Many foreigners think like it is more authentic or traditional to eat sushi by hand, but it was simply ancient custom when sushi was sold as fast food at sushi stands on the street long long time ago like Edo era. Even then, we never ate food by hand at restaurants, diners or home. Of course, you can eat sushi by hand or with chopsticks, which is your own choice, but it's not like eating sushi by hand is a correct/proper manner or anything. Most people here use chopsticks to eat sushi as you can see in this video. So, even if you eat sushi by hand, people here would never think like "This person knows how to eat sushi properly!" I have no idea why such an idea that sushi should be eaten out of hand has spread overseas...

I've heard it is considered polite and in good taste if you let your sushi rest in the soy sauce for a few minutes and then nibble at the fish bit-by-bit. The proper doneness to eat sushi btw is medium well, I believe. They will try to serve it to you initially too rare, so you must continuously spit the food back up and sent it back to the chef to reheat the sushi to your taste (this is actually a compliment), just like how you would at a western fine-dining establishment.

+Gyu-Sub Lee Yep that's right, and the only cultural alternative in japan is to clench the sushi in your hand such that the fish and the rice gets perfectly blended together into a mush so you can dip it into the soy sauce in a more balanced fashion. Oh and to save effort do 2 to 3 sushi in one hand. Doesn't matter if the fish is different, just gives more layers to the taste.

I think you both did very well fitting in. You were not obnoxious like so many foreigners can be. You were polite, ate well and hearty, didn't turn your nose up at anything and had a good time with the locals! Any nay sayers posting are pretty jealous that you were able to eat fine sushi in Tokyo, Japan. Can't do finer than that! The sushi looked fairly outstanding and you both look like you enjoyed your meal!!! Thanks for the video. I enjoyed it very much!

What the sushi chef says is the law. I've been to sushi Dai before and they know what is the best. Sure Jiro's may be better but it is also ten times the cost for something not all that much noticeably better.
Wow I was there just a few weeks before you were and sat 1 seat to the right from where you are in this video! Wished I'd taken more, but it's hard with so much good sushi in front of you. Someday I hope to go again; hopefully next time with a little less than a three hour wait though!

The first time I tried sushi I tought it was ok, didn't taste THAT much to be honest, well I live in Sweden so ofcourse we wont get this high quality sushi. But then I traveled to the west coast and stumbled across a sushi resturant, that sushi was fantastic since the fish must have been more fresh, closer to the sea.

Actually the chef applies the wasabi and soy sauce for you. You cant see it in the video, but the chef also tells you when to apply condiments. Some pieces dont need it, some do.

Simon Fan It's 5000 Yen. I was there last year and it's not that expensive really. The quality is absolutely amazing. The queue is very long, but once you're inside they don't rush you at all. Take all the time you need, drink some green tea, talk a bit. They don't want more customers, they want the ones that are there to have the best experience possible.

It's less then 30 euros per person and you get about 7 or 8 varieties and also soup and water. Try Sushidai or Daiwa sushi which is two doors further down the alley. For Sushidai you can queue for 2+ hours, for Daiwa if you are lucky, just 10-15 minutes :)

JaccoFF actually when you eat sushi this style, the sushi chefs season it and flavours it for you, so that you don't really need to use soy sauce! At least not for every one :)

Its considered rude to add soy sauce, as you are essentially saying the sushi chef didnt add enough soy sauce. The sushi chef should know how much soy sauce they need to add to complement the sashimi (and same goes with the rice, you shouldnt take out some of the rice inside the sushi becuz thats just saying they had too much rice)

5am must be after the clubs close. The restaurant must be sanitized very well for the food tone served that way. Food on a counter with no separation, no gloves whatsoever. Granted at 5 am close to closing time.

Its a custom in japan to eat sushi directly as a whole. Because, it is a sign of disrespect to the sushi chef if you eat it by half or separating the fish from the rice. And it is best to not add soy sauce or the wasabi to the sushi since usually the chef like it the way it is and it will please their heart :)
