Gin can be a very polarizing spirit for some people. Whenever someone tells me they hate gin, I set them up with a Tom Collins or a French 75. That's usually enough to get them thinking more positively about gin.

I use Bombay Dry or Gunpowder Irish gin, .25 oz simple syurp, .5 oz of lemon juice and 2 oz of gin, shake, pour then top off with polar club soda.

Lemon Juice is sometimes overpoweringly citric if its not well incorporated by shaking! Not always true but a good general rule!

CNHphoto yes there is. I use Beefeater because it is a very citrus forward Gin which pairs well with this particular drink. Now although Plymouth is its very own style of Gin and is not London Dry it too would go well In a Tom Collins. I try and teach people to use high quality spirits which are low in cost. Not all Gins should be made into cocktails, some are meant to be enjoyed alone as the nuances of flavor would be lost. The point is to pair the flavor profile of whatever Gin you’re using to the other ingredients in the drink, and hopefully you’re creating a well balanced cocktail. A lot of Bartenders go wrong with Gin cocktails it is a spirit which is so variable label to label that you need to have a clear understanding of each flavor profile to successfully make a drink withbit

The Educated Barfly: YES! You can easily destroy a lovely cocktail with the wrong gin... That just makes everyone sad. Because a gin is all about--for lack of a better term--the infusion ingredients, some of those actively fight the mixers creating a muddled mess. I haven't found my preferred gin for a gimlet, but botanist is a forerunner. I don't know how well it would do in other cocktails, but I suspect that due to the quantity of "infusions" that it might pair well with most cocktails.

Great Video, and also one of my favorite Drinks. I really can't see why you would add the ice later though, there's no difference in terms of heat transfer. You're moving the ice through the drink instead of moving the drink around the ice, so the contact and movement between the ice and the drink is the same in both cases. The dilution of the drink depends on the surface of the ice, the temperature difference between the ice and the drink and movement of the ice inside the drink.

JanusDarke1 when you pour spirits over ice you dilute more. I always put spirits first then ice, this is most important because I’m teaching over a video so I have an idea that most people will use just the normal Ice from their fridge or liquor store so I try to teach in a way that will protect the integrity of the cocktail

I was asking for a technical explanation, or at least a source that backs your claim. As i've said, there is no physical difference between moving the liquid over a cold surface and moving a cold surface through a liquid. I don't want to annoy you, but when you make claims like that in an educational video you should deliver facts to prove your claim instead of just repeating it.

I was wondering about this also. Maybe because when you add ice after pouring the drink in, the ice most readily dilutes and takes heat from only the liquid on the superficial layer of ice first, leaving the liquid underneath to be affected less at first as the heat would have to transfer through the whole liquid from the layers underneath to reach the ice. Whereas when pouring over ice, all the liquid will be cooled and somewhat diluted as the ice floats up to the surface, making contact with all of the drink. Doubt that the difference could be that well perceived if at all though if that is the case.

I disagree with using Luxardo cherry in this one. You want the classic bright red maraschino and half lemon wheel. The Luxardo syrup is too much for the near colorless drink. The others do not bleed as much. You want it to remain looking cool and refreshing throughout the drinking process. Not like a used maxi pad has been tea bagged into it.

The reason that it doesn't taste good is because of the gin that the bartenders use. If the gin fights the ingredients, the drink it's never going to be good. Not all gins are created equal.
