I worked at a Thai place for almost 3yrs and they'd leave the ginger in really hot water for about 5-10 sumtimes longer depending on how much, and it'd come off super easily with the knife

To be honest, if I'm the one cooking, I would strain it too. Maybe not the shallots, but I sure as hell won't be gnawing on lemon grass and galangal. It already gave whatever taste and aroma it had to the soup, why keep it? It's the same with cinnamon sticks and star anises.

Ok, this is my fave soup, sooo good and easy peasy. You are the 1st one who strains their soup....hooray!! No woody, harsh lemongrass splinters. In NY there was an amazing Thai place that made the best soup and strained it and, like you added the chicken stock. Perfection. Ty for the tutorial.

This soup is amazing. I've been making a different version using good quality red curry paste but this blows the other away - I actually made both and did a family taste test. Everyone (4 people) agree this is the better version. Subbed ginger for galangal, lime zest for kaffir lime leaves, and forgot to buy thai basil stalks (though I suspect that would have ended up being as hard to find at the galangal). This has the perfect balance of flavors - sweet, spicy, and simply delish

Ok - just found your channel. I have been friends with several people from Thailand and here is what I learned about Tom Kha Gai. First, it was pronounced (to me) as T-H-om K-H-a Gai. (Emphasis on the "H"'s) Don't ask me why - that is just how they pronounced it. Second, none of my friends ever took the veges out. The soup always came with the onion, lemon grass, sometimes with ginger, sometimes with the other - the chicken, mushrooms, sometimes bell pepper, lime leaves, sometimes with cilantro, and they used dried and crushed Thai peppers (You could add your own). Usually they rated the dish from one to five for hotness. I only ONCE tried the #5 and spent two hours eating the soup. John (at Thai Jasmine in Houston - now closed - John and his wife retired) offered to change it out but I sat there and ate it. Thai Jasmine also did our wedding rehearsal dinner. I paid for 300 people to come and only about fifty did. We wound up giving away a lot of food and taking home entire pans of Thai Egg Rolls, this soup (had to go buy a container for it) and gobs of Yellow Curry Chicken. Good times. But thanks for posting this recipe. I'm on Social Security - but I'm going to go get everything and make it - but I'll probably leave the veges in as well - for old times sake. :-) Keep doing great work like this! I loved it! :-)

NO asian markets in my town...for those that can't get lemongrass, lemon zest is a pretty good substitute. Use lemon/lime leaves as a substitute for kaffir lime leaves. Use equal amounts of ginger to substitute for galangal. You can make chili oil with dried arbol chilis and a few spices throw in. Thanks Josh! always love your videos

My all time fave, have half assed it just from attempting to copy what I've taken out from local Thai restaurant with so so results. Attempting to grow as much of the ingredients as I can but ginger, galangal and turmeric don't seem to like my climate, too dry I think. Lemon grass is easy, kafir lime I'm starting, other citrus thrive for me.

But your cooking this menu so yummy :) this my recommendation and I love your channel so much. thank you.

Usually what I’ll do for the chicken is sear the outside of it first, just so it’s got some different texture to it, maybe also use some chili paste for added flavor (kinda using it the same way you’d use tomato paste), but this is a banger recipe

I followed this recipe, except I reduced the amount of fish sauce significantly. The amount you put in is waaay too much IMO, and luckily I have prior fish sauce experience. To your credit, you do tell people to season it with sugar and fish sauce, which hopefully is meant as a “season to your taste”. Thanks for yet another great recipe. I’ve made a few of them and they turn out great! I love the way you explain things. Super easy to follow and copy.

Tom Kha Gai is pretty freaking good. My family buys it nearly every month as a treat. And we finish it everytime. But since we live near the beach now, we have the seafood version (Tom Yam Talay) and it's amazing. And I don't even like seafood that much! Ps don't say Tom Kha Gai too fast. Awesome recipe tho!

You can also change the chicken to tofu then it becomes a tom kha taohu instead. Gai/Kai just means chicken.

Looks amazing… trying to make this soup as we speak. I’ve used Low Sodium Chicken stock from Wholefoods and it’s currently simmering. Smells amazing but tried the soup and it’s not salty at all. Is that because of the Low Sodium stock? I’ve added a bit of salt… Thank you for this amazing recipe. Been looking to make this for years

So I've been kinda cheating on this... I've been using lime zest and juice as a substitute for the lime leaves because they are hard to find for me.. same with whole lemongrass but I can find like a tube of it in the produce section.. ive also used essential lime oil and lemon as well.. still turns out delicious.. is there no salt in your recipe? I was wondering if browning the chicken before hand would kick it up a notch.. but thanks for the video..
