We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.
▼ 【Ingredients】 for 4 persons
4 large prawns
1 clove garlic
100g onion
80g bamboo shoots
40g Shimeji mushroom
4 button mushrooms
40g red bell pepper
1 bunch coriander
Some fresh lemongrass
1 piece fresh ginger
600ml water
2 tablespoons Tom Yum Kung paste
1/2 tablespoon sugar beet sugar
Salt
1 lime
Some vegetable oil
【Preparation】
・ Shell prawns (reserve shells) and remove the vein from the back.
・ Slice onions and garlic.
・ Cut the bamboo shoots into cubes.
・ Separate the shimeji mushrooms into small bunches.
・ Roughly slice the button mushrooms.
・ Cut the red pepper into 1-cm wide pieces.
・ Cut off the root ends of the coriander and reserve.
【Progress】
1. Heat the ginger over an open flame.
2. Heat the salad oil in a fry pan and sauté the ginger and shrimp shells. Remove the shells.
3. Sauté the mushrooms, bamboo shoots, red pepper pieces, cilantro roots and stems, lemongrass, onion, garlic, sugar, and Tom Yum Kung paste. Add the water and the shrimp. Bring to a boil and lower the heat to a simmer.
5.Turn off the heat and squeeze fresh lime juice over it to finish.
6. Serve in a bowl.
