This made my day, seeing my two favorite you tube ladies joining forces to become the "Dynamic Duo". I remember last fall, canning about 50 lbs. of Roma tomatoes by myself and it took this 72 year old man all day to get them all done. It's a lot of tedious work but the end results are so rewarding. I can still do most everything that I used to do, it just takes me three times longer to do it. Love the kitchen design and layout, giving plenty of room for helpers, while not stumbling over each other. Hope to see lots more videos in the future. Blessings to you both.

Happy to see you again. You must be doing well to take on such a big job. I have to pace myself now, getting old and not well. I'll share something I do for tomato sauce. I cut & core tomatoes into quarters & put into my steam juicer. Steam for an hour and it removes a LOT of the water out of them. The pulp that is left goes through the strainer to remove seeds & skin and what is left is THICK sauce so it doesn't have to cook so long to thicken.

Great advice, I cheat by only using Roma or San Marzano tomatoes for sause. Not much juice in them. Blessings
