Full written recipe for Tomato Rasam
Prep time: 10-15 minutes
Cooking time: 15-20 minutes
Serves: 6-8 people
Rasam Powder
Ingredients:
BYADGI CHILLI | ब्यादगी मिर्च 10-12 NOS.
GHEE | घी 2 TSP
CHANA DAL | चना दाल 1 TBSP
TUR DAL | tur दाल 1 TBSP
BLACK PEPPERCORNS | साबुत काली मिर्च 3 TBSP
CUMIN SEEDS | जीरा 3 TBSP
CORIANDER SEEDS | साबुत धनिया 5 TBSP
CURRY LEAVES | कड़ी पत्ता 18-20 NOS.
FENUGREEK SEEDS | मेथी के बीज 1/2 TSP
ASAFOETIDA | हींग 1/2 TSP
Method:
Set a pan over high heat & lower the flame once the pan gets hot, add the whole red chillies & toast them over low flame until crisp.
Transfer the chillies into a bowl once toasted & set it aside to cool down.
Add ghee in the same pan & then add chana & tur dal, stir & roast them over low flame until aromatic.
Add black peppercorns once the dals get aromatic, stir & cook briefly with the dals.
Further add cumin seeds along with coriander seeds & roast them similarly.
Once the dal & spices have toasted, add the curry leaves, fenugreek seeds & asafoetida & cook for a few more seconds.
Then transfer the mixture into a bowl & cool it down completely.
Break the stalks of the whole red chillies & add them into a mixer grinder jar once cooled, grind them into a fine powder & then add the cooled down spices & dal mixture, grind everything together into a semi-fine powder.
Your freshly made rasam powder is ready, store it in an airtight container, keep it in the fridge & use it for upto 3-4 months.

Ingredients:
TUR DAL | तूर दाल 1/4 CUP (WASHED & SOAKED)
WATER | पानी AS REQUIRED
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
OIL | तेल 2 TBSP
RED CHILLI | लाल मिर्च 3-4
MUSTARD SEEDS | राई 1/2 TSP
CURRY LEAVES | कड़ी पत्ता 12-15 NOS.
GARLIC | लेहसुन 5-6 CLOVES (SMASHED & ROUGHLY CHOPPED)
ASAFOETIDA | हींग 1/2 TSP
TOMATO | टमाटर 2 NOS. (CHOPPED)
SALT | नमक TO TASTE
CORIANDER STEM | धनिया के डंठल A HANDFUL
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
TAMARIND | इमली LEMON SIZED BALL (SOAKED)
GREEN CHILLI | हरी मिर्च 2 NOS. (SLIT)
JAGGERY | गुड़ 1 TBSP (CHOPPED)
HOT WATER | गरम पानी AS REQUIRED
RASAM POWDER | रसम पाउडर 2 TBSP
HOT WATER | गरम पानी AS REQUIRED
BLACK PEPPERCORNS | साबुत काली मिर्च A PINCH (CRUSHED)
FRESH CORIANDER | हरा धनिया A LARGE HANDFUL (ROUGHLY CHOPPED)
Method:
Add the washed & soaked tur dal in a pressure cooker along with enough water & turmeric powder, put the lid & pressure cook the dal for 3-4 whistles over high flame.
Once cooked let the cooker depressurize naturally & then take off the lid, whisk the dal well using a whisk, make sure it should become completely smooth & watery, your cooked dal for rasam is ready.
To make tomato rasam, set a pot over high heat & add oil into it, once the oil gets hot add in the red chillies, mustard seeds, curry leaves & garlic, stir well & cook briefly.
Further add asafoetida, tomato, salt & coriander stem, stir well & cook until the tomatoes get mushy.
Add turmeric powder & tamarind pulp along with hot water, stir & cook for 3-4 minutes until the raw smell of the tamarind is gone.
Then add the cooked tur dal, green chilli & jaggery, stir & then add hot water to adjust the consistency, rasam is always watery, it is not as thick as sambar.
Let the rasam simmer for 7-8 minutes, if it thickens up then add more hot water to it.
Once you have let the rasam simmer, add rasam powder to a bowl along with a few tablespoons of water, stir well until no lumps remain & add the mixture to the rasam & stir well.
Taste & adjust the salt at this stage & add crushed black peppercorns along with fresh coriander, stir & cook for 2-3 minutes.
Your delicious & super healthy tomato rasam is ready.

Sanjyot, I'm stunned with the level of accuracy you portray when making South Indian dishes. I can only imagine the amount of research you must have put in. Because some of the pointers you mentioned in the video are things one can only learn while watching their mothers and grandmothers in the kitchen; like the watery consistency of the rasam, the pepper dominant flavour, and that you shouldn't boil the rasam too much after you add the powder, the jaggery which is actually authentic to the Udupi style recipe etc! Your respect and passion towards different Indian cuisines warms my heart like the rasam warms my body! Keep up the splendid work! ♥️ A small fun fact for non South Indians: we like to eat rasam with rice that is cooked slightly mushy on purpose. We then overload the plate with rasam and squish the rice further with our hands before eating (almost like khichdi). When children fall sick, parents will usually hand feed 'mushy-rasam-rice' and have a gentle conversation to distract them. Another common 'fever-food' in our homes was hot rice mixed with ghee, salt and pepper!

For some one who grew up eating the variety of rasam every day ,which is kinda a staple food for a South Indian .. This same old recipe turned out to be a breath of fresh air.. Cherry on the top.. If you have pepper rasam with hot chawal and thoda ghee key saath it actually helps in curing soarthroat or cough.. Been moms and naani recipes since ages.

For all those wondering - Byadige chillies are the South Indian version of Kashmiri Red Chillies (slightly different in size and very different in flavour).. They give a wonderful colour and are the main colour ingredient in Andhra Avakai

Andhra avakaya is made with guntur chilli. We have our own variants which are of our land.. byadgi is from karnataka

I tried this rasam recipe today without garlic and chillies in thadaka . I use only rasam powder and dal with tomatoes and only curry leave thadaka with hing and rai . My god it taste heaven it exactly tastes like Dharmashala temple saru bravo 👏 😋 🙌 👌

I am an Indian and love dishes from all the states of India but, rasam n hot rice with ghee is my favourite as well as of my family. I loved the way you prepared tomato rasam, the way I prepare it, otherwise many people make it complicated! It's simple n easy. Thank you for providing information on tomato rasam. I have said before a few times that your videos are like tutorials. I say that again. As a South Indian I vouch for the authenticity of this rasam. And to all the details that you have mentioned. I appreciate the in depth research that has gone into this - as I have regarding all your South Indian recipes - and the effort you put in to keep them as original as possible. I respect fusion dishes, but there are some which should be enjoyed for their purity. Rasam is one such simple, yet immensely complex dish. So I am also convinced that your recipes from other parts of India are just as authentic. I watch a few other celebrity chefs, and genuinely admire their skills, but follow perhaps only yours in actual cooking. This rasam can be made without the byadagi powder as a variation or with less tomato, giving weightage to tamarind. There are many many versions of rasam but this what you have shown is perhaps the most popular and made across Karnataka. We use it as a digestive, either with rice or just by itself. Some of my continental friends love this as an aperitif too. Thanks as always chef Sanjot. Best wishes. P. S. I put in a lot of work to try different recipes and standardise them and save for my daughters. Especially our traditional everyday dishes. They will need them when I am gone...or that’s what I think. For a while now I am thinking of telling them just to learn from your channel. 😁

Awesome Chef. At my home we don't use dal and all the masala ingredients and tomatoes+tamarind puree are grinded kacha pacha (coarsely). For seasoning we use an onion, curry leaves, balloon chilies, mustard and hing. Into that we add the coarsely grinded mixture and some coriander leaves. Hot Rasam rice with a fried fish is heaven

Rasam (Chaaru in Telugu) can be enjoyed to the fullest only when u mash hot rice almost to a paste consistency then mix rasam with it n add desi ghee to it.. That's unmatchable bliss😍😋

Traditional rasam we use solid hing. You can soak it in water and use that water. Takes the flavor to a different level. Also you don’t have to remove stems from the chillies before grinding. Keep up the great work!! Thank you

Appreciate the beautiful rasam recipe. Pls do try this sometimes and checkout if you find any difference. After adding rasam powder, give it one boil, then add dal water. After this the rasam will start frothing. Remove immediately from the heat. Add vagaar of mustard and jeera in ghee with a splash of hing.

Sanjyot (meaning Light of Happiness/Light of the Sun wow a lovely name) Bhaiyya. My complements to your parents for having given you such a thoughtful name I mean you really live up to the meaning of your name. This is an absolutely yummy recipe. However we dry roast all the masalas as the ghee/oil are likely to become rancid, by dry roasting we are able to store the rasam masala on the shelf, for almost a year, also what we do is soak the Turmeric Rhizome overnight, sun dry and dry roast it and add it to the dry masalas while grinding. The rasam served at the Udupi Sri Krishna Temple does not have garlic in it. This of course is what can be called as a Chef's artistic liberty.

Even though the recipe looks simple, South Indians believe in making rasam as a pure art.. just to see your rasam itself looked perfect for me. I'm sure it has tasted heaven.. very happy to see South Indian recipes on YFL..
