I absolutely love Doc's expression and his choice of words at 1:31. He's basically saying "Go on, call me a cheater out loud and try to do something about it." He knows that even when drunk, exhausted, and coughing up his lungs, he could still gun Ike down before he could so much as raise a gun. And he's just wishing Ike would try.

And I can assure you that Ike wouldn't win it. Doc knew Latin, could recite lines from Shakespeare during gunfights and quote the bible better than a southern Baptist. It wasn't just that he was a doctor. He was a tremendously well read, educated man. The combination of that with his drinking, gambling, pistol shooting ways just makes him one of the most compelling Western characters ever. That and his verbal wit. And the fact that he was living with a death sentence, which made him super dangerous. I also find it interesting how egalitarian his relationship was with Kate. She was known for being able to whip out a pistol at times to get Doc out of some bad situations. Sorts of reminds of American novelist Jack London and his relationship with his 2nd wife. Jack was a bit of an outlaw himself. Very different for the times. Of course Doc and Jack were not the kinds of dudes for settling down and having kids. They were ideal guys for attracting women who were before their times but who also were attracted to bad asses.
