As a viewer I can feel her being earnest and committed to improving the channel - using English, writing down the recipe, her attentiveness about the difficulties of getting ingredients for Japanese food outside of Japan, her efforts to substitute for them. I agree with you and I understand why she is speaking English. But I think her speaking English doesn't make the channel better just more accessible to Americans who are too dumb and lazy to read subtitles.

@@trabadass English is the most used language when it comes to comunication and most people learn it as a second language, so she probably talks in english because the vocabulary she uses is pretty simple and will atract more viewers, not just americans. Because the Japanese have Katakana, an alphabet system for foreign words. While using the katakana alphabet, words like entrepreneur, renaissance, Worcestershire are not just a letter to letter extrapolation, but rather an extrapolation of how the original word sounds. For eg. Worcestershite-> ウ・ス・ター・シャー -> U・su・tā・shā(usutaashaa)

I just discovered this channel today, it's quite refreshing because the editing style, it's nice to see the whole process for one single serving instead of just cutting it straight to the end product like many other cooking tutorial does to make it shorter. This helps people see minor nuances you can make to a dish. EDIT: And Sutan is so adorable, reminds me so much of my baby nieces when they want to communicate with you with their baby talks.

That's because their ketchup is sweeter unlike the one in the West which is a bit more sour. Found some at my local Asian stores and I was amazed at the difference and have come to understand why Japan and South Korea they use it in their recipes. My Japanese friend said it also helps to use a bit of ketchup in some recipes if something is lacking in taste. I've also come to prefer it more than the west's ketchup now because it's become too sour for my taste.
