with vacuum sealing wet/juicy foods, I freeze the items first, (I use a container that I can run some warm water over to then dislodge the frozen food, I usually use plastic food storage type containers for this and I recommend NOT using glass containers as they could potentially break/shatter) then the next day I run some slightly warm tap water over the container and I gently press on the bottom to help pop the frozen food out, and vacuum seal them without a runny mess, however I still use the moist option when sealing just in case...

Marinade seal a meal trick. Freeze the marinade sauce. Then seal the meat and frozen sauce together. As it thaws mix it around occasionally. Clearly it takes longer so plan ahead.
