Another example are the "Adventure Book" series of games from Ravensburger. I own The Princess Bride one. It's super easy to set up and get playing.

Terracotta Army is really good we enjoyed it on a thematic and mechanical level

Azul is super easy to get to the table. Chuck all the tiles in the bag and go. You’re playing in like 30 seconds.

Great list! Definitely Carcassonne. My wife and I leave the base game and meeple out for two players. Go to coffee game. I’d add in there: Dice Miner Cascadero Yinsh That’s our constant rotation.
