@@MKJ23_Productions It's so different. When you grate it, it's almost fluffy. The 36 months stuff is the best (IMHO) but24 months is definitely good still. The older they are, the less 'farmyard' taste they have.

Yeah, I also like the Italian blue cheese - gorgonzola. I like both the French and Italian versions. I understand Germany has its own type of blue cheese. Of course, in the US, we have some decent enough gorgonzola.

I buy wedges of Parmesan cheese and hand grate the cheese on my food. Parmigano is ridiculously expensive but the Parmesan still tastes good. However, I will absolutely stay away from that stuff that comes in a green plastic bottle. It’s not cheese, it doesn’t look like cheese, it doesn’t smell like cheese. It’s just abnormal. It’s like someone bottled athletes foot fungus scrapings into a bottle and labeled it as cheese:

I rarely eat American "parmesan" cheese, though it's still delicious. I try to stick to authentic Italian cheese for health reasons. Aged for a long time, but it's not cheap.

I found Grana Padano here in Nicaragua for $20+ per pound. It's not even Parmegiano Reggiano nor Pecorino and it's expensive as f. I'm seriously considering moving out of Nicaragua and I'm in love with real Italian cuisine. I still bought the cheese and I'm deciding what dish to prepare with it lol

Too many Americans, if you ask me, won't like what the rest of the world calls cheese. I'm honestly shocked any place in Texas would have real cheese. I'm from TX, BTW. Good cheese is always imported into the US, other than cheddar, if you want authentic product. Wisconsin is what I call the "ugly step child" of the cheese world in comparison to Europe. It's actually illegal to buy or import some real cheeses in the US because of FDA guidelines. There are a few very tiny places in the US that make as close to proper cheese is as possible in the US, but with all cheese having to use pasteurized milk in the US, and forget about double crème brie for example because that's not allowed either the last time I checked, it's just not the same in taste or texture as with raw milk.
