I have had a lifetime struggle with carbs. As I began fasting,I’m found some easier to give up or reduce than others. Using some kombucha for a few days helped break the cravings. My biggest area of challenge that wash left after that was my tea. I like my hot tea sweet. I realised the taste was more important to me than the quantity consumed. So, sipping on a sweet two ounces of tea as opposed to a sweet 6 ounces of tea is very satisfying for me. I get the same level of sweetness and satisfaction since it was never about hunger anyway. Also sweetening lemonade with frozen blueberries for a lemonade smoothie is super delish. I have been tol sourdough bread is a good substitute for bread, so I switched over plus cut it down to half. Chopped salad I find very satisfying-more than tossed and I am able to consume more salad that way.

Thank you for making these videos. I just love your simple and direct approach at explaining the foods we eat. I'm 57 and always ate whatever, my mother is European and raised us on homemade food so that helped. But just like you said we end up eating unhealthy processed and fast food due to "life". I've finally changed my diet completely and started losing weight and feeling better almost right away. Instead of saying "I'm on a diet" for me, it boils down to what and how much I eat. It took me a long time to educate myself and much determination to reach this point. Hasn't been an easy road and I can now see why obesity is such a problem. My heart goes out to all who suffer from it. Thank you kind sir.

At age 47 I was 187 lbs, 6 ft tall, active, lots of walking at work and at home, and a pretty low body fat percentage as measured at local college. But I was living on a fast food diet. Then I married a wonderful woman, and moved in with her and her widowed mom, who thought with a man in the house for the first time in fifteen years every day should be a Thanksgiving meal. I quickly gained 25 lbs, and then put my foot down and said no more big meals every single day. But I was still a sugar and nicotine addict back then. Gradually my belly fat and weight increased, reaching just under 260 before I wised up, quit smoking, cut out all soft drinks, cake, cookies, pie, etc But it was too little too late; I had a ten-year-old beer belly, despite drinking absolutely no beer for the past twenty years. With great effort at age 70 I lost from 259 to 235, all belly fat while gaining some muscle through exercise machines and some light free weights.. I hit a plateau where nothing I did for over two months moved the scale weigh-ins either direction at all. Then I discovered first Dr Ekberg, next two long YTs about fructose as poison and the metabolic reasons why that is true. Today I am on a new quest and have new tools, thanks to Dr Ekberg, to reach my goal of becoming sustainably under 200 pounds sometime in the next year or so. Thanks for giving me tools and hope.

I stopped eating sugar and that stopped me having this "always hungry" feeling. I dropped weight from 113KG to 90KG, and all I did was avoid Sugar. I think that automatically, because I wasnt eating sugar, I tended to eat more around meals and not snack in between. I think that is why I dropped weight so rapidly.

A month ago I was in the hospital for 3 surgeries with a kidney stone stuck in the ureter tube. I was put under total anesthesia 3 times and had a stent placed into the kidney. An unexpected side note to this was that I was also diagnosed with pre-diabetes. The idea being that I cut out ALL sugar and processed flour associated carbs. It reminds me of the same principles as the “Atkins” diet - which I lost quite a bit of weight on in my 20’s(I’m now 63). I’m not so much looking toward that angle of it at this time but from the standpoint of it benefitting my diagnosis now. I enjoyed the fact that I could eat all the things I loved to eat most of all- bacon ,eggs, animal flesh meats, true meat lunch meat meats like shaved hams and roast beef, etc. I was now turned of lost by the fact of ingesting hyper processed , “ chemicalized” additives and severly altered foods that went against my intuition now. It is a solid fact that it requires diligent label reading and paying attention. For example , the average bologna is composed of fillers that are a grain derivative in nature. So dont assume that meat products are strictly solid meats, even baked deli hams may have a sugar glaze coating. There are many ways to diversify protein intake strictly, it suits my preferences very well. Im still working on my exercise regimen more next more.. baby steps, dont putt tons of pressure on yourself or you will sabotage the entire focus.

Thank you Dr.! I have watched this several times and will continue to use your videos for they are healing me! Since strictly limiting my diet I no longer suffer with my chronic IBS, GERD, and even the severe acid reflux with nocturnal aspiration!!! My main cheat is a coconut based creamer with sugar in it. I was so addicted to the name brand French vanilla creamer for coffee and teas. I am now drinking my coffee black like I used to before they came out with all that flavored creamers. And I truly enjoy my dark green leafy lettuces fried in bacon drippings and topped with vinegar and lemon juice. Also salads with olive oil with lemon and vinegar. Been enjoying half an avocado a day and eggs daily. One thing that makes me sad is that I watch several farm/homesteader family channels on youtube and see them feeding most of their animals grains daily. They do slow that down during the summer when grasses are available. But some just don't have room for animals to graze on, so they are grain fed. So they aren't truly natural foods once processed. And they tend to grain finish their cattle for 2 weeks before they send them to freezer camp. They must not know how bad that is for themselves as the consumer of their own animals. I do miss many foods, but do not miss all the side effects they were unknowingly causing me!

Great channel and info. I grew up eating “heathy”, as far as Americans are concerned. And still always felt under-nourished. These tips are great. And while come to know and do most of these tips through years of reflection and trial/error, it’s refreshing to hear a doctor’s take and hear it’s not crazy to think 90% of “Normal” store food isn’t food at all.

Hi, and greetings from Norway. Thank you for making these very informative videos. Finally I fell like I'm actually understanding some things about food, health and the body. A few weeks now my family has tried low(er) carb diet and intermittent fasting and there seems to already be some benefits. We have to watch out though, because we do not need to loose weight so we need to eat enough. A couple of things have proven to be very hard to adjust to; Cutting grain entirely, getting hold of "proper" animal products like grass-fed and with no preservatives (close to impossible it feels like) and lastly almost all dairy is pasteurized(mandatory by law)

It's funny that you mentioned the sugar taste buds changing... I have been almost 2 years CANE sugar free, but every once in awhile I "remember" how delicious a cup of hot cocoa tasted with sugar. Inevitably I make the mistake to add a teeny tiny half of a teaspoon of sugar to my hot cocoa and now I have to dump the entire cup! 😂 Sugar is so disgusting that I literally can't handle it in my chocolate but I still remember how delicious it tasted and I try it every time haha!!! 🤮🤣

I actually made myself some chocolate syrup last night to go on top of strawberries. I melted a teaspoon of coconut oil and then I added cocoa powder just enough to melt it down, added a few granules of salt and a couple eyedroppers full of vanilla extract and poured that directly on top of my strawberries. (By the way it's delicious). To me it was so sweet it was incredible because it was on top of strawberries which are already so sweet I can barely handle them. I made the mistake of telling my husband to take a bite... I got the craziest look out of his face 😂🤣

Thank you Dr Ekberg for your wealth of knowledge, and encouragement. I began my clean eating 3 weeks ago. I rarely eat breakfast, so I intermittent fast. By stopping high carb intake so quickly I of course felt weak and a weird kind of foggy headed almost headache. But I knew it would pass. I lost 5lbs the first week, mostly water weight from inflammation! I could tell I was really inflamed in my legs, fingers, face, (a pair of sunglasses I couldn’t wear before had felt too tight I can wear now!) at 3 weeks I have now lost 81/2 lbs. if I want a sweet treat I hold off until after dinner. Then it’s a piece of fruit, or I make my own popsicles, put fruit in my Ninja. Sometimes ripe banana and Tbl of cocoa, Or blueberries and a little pineapple juice, I add heavy whipping cream if I want it to be a little more like ice cream popsicle. still going to experiment with other natural ingredients. For my coffee I use just heavy whipping cream (read label, beware some have additives) and sometimes also add a tablespoon of cocoa powder.

I'm 61 6' 6" tall and have no major ailments. I now weigh 230lbs. I lost 40lbs in 3 months I have 30 more lbs to go. I am using the tools Sten speaks about: OMAD and long term fasting based on good real food for loosing weight. Once I was Fat adapted long term fasting is super easy for me. I have decided that it was time for me to use Sten Ekberg's advice to avoid diseases before they occur. In my case I have to stress how everything Sten says about fasting applied to me. Feeling mentally focused during long term fasts (1-14 day fasts) is mind bending. Once you realize that the human body has a big fuel tank, you do not need to top of your tank every 3 hours. I Started out with a 3 day fast, then I did OMAD for two weeks, then I did a 7 day fast, then OMAD again for 2 weeks, then I did a 14 day fast. Wow do the pounds come off fast (1.5 lbs per day). I sent a request for video to your website on (Good body Fat Vs Bad body fat?). Hope you can do a video on that.

Just changed my diet two days ago, and as an ex heavy carbo-centric eater, I was so confused about what to eat. So this video helped too much, thank you. I have been dealing with fatigue for quite a long time. Especially after meals, it's an incredibly difficult thing for me to somehow manage to work or not to sleep. I came across your channel on youtube recommendations, and I'm watching your videos for about a month now. After a couple of videos (I believe it would be fair to call them lectures as well, I feel like I'm back at college and learning a lot :D), I gradually realized that I'm very likely having some issues with insulin. Considering my past dietary habits and the family history with diabetes, I might already be a diabetic, too. The overwhelming feeling I got to endure last week after meals was a tipping point for me. I immediately cut off the sugar and stuff like bread. Will go to see a doctor to know what exactly is happening, but I feel much better since the last two days and had none of that disturbing feeling again. Thanks again so much, you already helped me a lot. You are a true Maester, and you look increadibly healthy and fit, and that tells a lot about what you are doing on this channel :) Wish you a long and merry life!

don't go too fast. I read that this is one of the signs when you first start doing this is fatigue. I lost at first 5 pounds a month, then it slowed down to like 3 per month and lost 25 pounds over an entire year. just be patient. if you are too strict on yourself and try to do it too fast, then you might give up on it. I think pizza and chips was the hardest thing to not eat so much. I was so used to snacking on fritos, potato chips, tortillia chips etc then following with ice cream with all the sugar in it. I think key to the chips thing is to just not have them around. dont' keep them around. and I found some fantastic ice cream made with whole cream, eggs, everything but they use a sugar substitute so almost no carbs. its called "enlightened" look for the ones that say keto on the label. dark chocolate is fine and if you really want something crunchy and salty you can eat chicharones, pork rinds fried. it's amazing

My grandma interestingly enough ate a lot of carbs a day and lived to 96. She had all her teeth in perfectly healthy condition until her last day. She was healthier than many younger people until about 5 months prior to her passing. She got up at 7 AM each morning and ate every morning 1.5 slices of dark Rye bread with jam and a cup of coffee with milk. She then walked to the morning church and back (25 minutes) changed into her work clothes and walked to our huge fruit, veggie, nut tree, and flower garden (40 minutes) which she took care of every day. She would eat another slice of bread with some sausage mid-morning when working in the garden. The garden provided the family with a variety of vegetables, salads, fruits, berries and nuts, and flowers. For winter she would prepare fruits into marmalade and make sauerkraut and vegetables to stay over winter. Her main food was midday when she cooked veggies, potatoes and meat or fish. Wednesday and Sunday she had some cake midday. Afternoon she had a coffee and another piece of rye bread with margarine and jam. Dinner was rye bread, margarine a variety of veggies and different types of sausages. She would not eat anthing else until the morning. Her health how mentioned before was excellent until the year she died. She needed help with cleaning and other things in the last 5 months of her life and all of a sudden died from a very short infection on the day our son had his first birthday. I visited her 5 days before her passing and we were sitting at her kitchen table drinking a coffee and she told me about her late husband who died on the last day of the second world war. She had tears in her eyes when sharing memories. Is it not interesting that she would be so healthy and live so long with eating so much carbs? She was always slim and never had diabetes. Probably it was her moving so much and not eating between meals.

That's because carbs aren't bad! 😜 It's the seed oils predominantly and even stable saturated fat if consumed in excess and in combination with carbs that create insulin resistance. Insulin resistance is NOT excess sugar or glucose, the body can regulate that; it's excess fat floating around, especially unsaturated fat like oils that block glucose from entering the cells resulting in insulin resistance. 😜
