I have not played Super Mario RPG, but I agree that the first 3D Mario games are timeless. And if Nintendo make a remaster and a remake of them, they can be perfected. Super Mario 64 should have the camera fixed, have the movements fixed, add some guide or hints to the missions and have the graphics upgraded. Super Mario Sunshine should have some movements fixed, bad glitches removed, add guides or hints to the blue coins as well as to the missions, remake the levels that are unnecessarily hard due to poorly rushed designs and give some upgrade to the graphics even though they are clean and pretty already (especially the water) and aged better than 64. Super Mario Galaxy should have the 3D World treatment so that the playable character can have a faster and an upgraded movements, become adaptable to the traditional controllers instead of motion controllers and give some upgrade to the graphics even though they are already clean and pretty similar to Sunshine and aged better than 64. Those are some ideas, but I am pretty sure Nintendo can and would have better ones in mind.

While I have strong nostalgia for Mario Kart 64, saying it has aged perfectly is debatable. The racers themselves are clearly sprites, the red shells have strange targeting behavior, the mushroom items were nerfed too hard, the drifting is not the more modern drifting system, and there's no denying the racers rubber-band harder than in any other installment.

I guess I can sort of understand the lack of mention for this one, but it’s also quite a shame: Portal 2, for me at least, is one of the most groundbreaking games of all time. The gameplay of Portal itself was already brilliant, and the simple yet cleaver plot was genius. Then the sequel pushed everything to 11 with the insanely rich storyline, amazing voice-acting (from the likes of JK Simmons, Stephen Merchant and Ellen McLain) and clever gameplay. Not to mention the insanely fun multiplayer mode. In my opinion, to this day (13 years later), it holds up -gameplay and world-building wise.
