I did this with limes I loved it when I was sick in a tea one lime slice. Or I added a spoonful to my stir Fry's instead of plum sauce :)

Wonderful recipes, thank you! I recently read that you should only use porcelain, wooden, or plastic spoons in honey. Also, only use plastic or glass lids.

@amycarruthers1098 Great Question! I strain out the dried elderberries with a sieve and use a spoon to help move it around so the honey can fall into a new jar. Store the honey in the fridge or a dark cool cabinet.. . Then, take a spoon full of honey by mouth or add to any tea. Those dried elderberries we strained out can be used to make elderberry syrup!

I kept mine in the fridge it did get sour and bitter but I left the rind on and that's the flavour that comes out of limes it was still good for months in the fridge and it was gone quickly come winter

How do we know this is really fermented. Any research? Like some people have tested fermented veggies with probiotic test results.

@MynorChang-l4g In order for honey to ferment, it needs a moisture content of at least 19%... by adding the fruits, berries, and veggies, there's moisture from them... but I do not have a way to measure the amount. So I can not confirm or deny if these have done a full ferment. What I can do is look for signs. Bubbles in the honey. The honey becomes thin, liquid. The taste. The smell.
