These all look great, I've never seen anyone put butter in the ganache but it makes sense and I bet tastes better. I would love to see videos on making jam and canning. Thanks for sharing!

I like to do 1:1 or a little more cream than chocolate in my ganache, emulsify/incorporate choc in cream in double boiler, then transfer to my stand mixer and whisk on fastest setting. Makes the ganache really light, but prevents from becoming whipped cream cuz too heavy with the chocolate in the cream

Hi Nicole! I wanted to try the swiss meringue buttercream but i noticed that in the ingredients list you mentioned the vanilla and the salt, but it doesn't show in the video when we have to put those into the mixt. SMBC stores great! You can make a week in advance or freeze it and make it a month in advance. Store left overs in the freezer too!!

Karly Calder I don’t actually know🙈. I use my ganache for multiple things as well as my salted caramel, so I’ve never just used it for filling. But my guess would be roughly around 3 dozen macs for both recipes.

Karly Calder yes! Ganache even freezes well! Refrigerate or freeze and then leave out a room temp for a few hrs to get back to a pipe-able consistency. The caramel can stay 2 weeks in your fridge. ♥️

Yes, if you aren't worried about having a shelf stable macaron (not selling out of your home)-- a curd or french buttercream is really amazing in macs

great question! american buttercream tends to hold up best in heat or the dark chocolate filling is nice and thick at room temp and it good unless sitting out in direct sunlight.

Love all the ideas in this video!!! I’m dying to try the ganache and the salted caramel. Can the ganache be made with any type of chocolate, i.e: milk chocolate and white?

Hi! Great question. No, this cannot be made with milk chocolate or white chocolate. White chocolate needs a 3:1 ration to be thick enough to set as a filling. 3 parts chocolate to 1 part cream....this has too much cream in the recipe for that. Ganaches can be finicky when changing the percentage of milk fat in them, they can separate easily when changing the type. If you want to do milk chocolate, I would suggest starting by taking out the sugar in the recipe and lowering cream content.

Cold butter is going to make a more dense buttercream. Room temp will result in a more light and airy texture. Thanks for the question!
